the water is really the kicker here, you can do without food for several weeks, but you can only go without water for a few days.
the stab wound in the side probally contributed to a nasty infection and possibly some blood loss also.
it is simply the natural state pf a person that has been beaten and stabbed and then hung up in the sun and deprived of food and water to die.
