Biscottis are twice baked, meaning that after they are cooled they are baked again, that's what makes them so hard and usually 95% biscotti have almond flavoring. I think the main difference is that you don't feel compelled to dunk a cookie into coffee or milk, but you want too more so with biscotti cause they are so dry. Yep the spelling is right

Biscotti are typically not as sweet as a cookie, and they are twice-baked. This makes them very hard and perfect for what they were designed for - dunking in coffee, milk or wine.

Butter and sugar content. Biscotti is a lightly sweetened and flavored bread, a cookie contains a lot more butter and sugar.

Biscotti (yes you spelled it right) is double baked, which means you can store them for a fairly long period of time which makes them great for gifts or even shipping distances!

Biscotti are harder so you must dunk them and they are more like hard bread.
