You should be able to use Honey instead. It depends on what you're making. Maple syrup also works well in a walnut or pecan tart for example.

2 parts sugar.....1 part water.....bring to a boil....dissolve the sugar into the boiling water.....once the sugar is dissolved ..... remove from heat......cool completely and then bottle

you can to mix 2 cups sugar and 1 water.so, to put honey extract(essence). it is an idea.once, i did it.
