It would definetly depend on what you care more about in your cake: beauty and ease or flavor and texture? If you want beauty and ease, fondant is for you. You have to be quick with it, though. Get it on your cake fast, or it will dry and crack. You can buy hot pink fondant, I mean SERIOUSLY hot pink fondant, from certain websites and magazines. Browse the web for a cake-decorating site or ask your local baker where you could find it. Some websites give recipes for hot-pink fondant. One problem, though. Fondant doesn't taste very good, which is where flavor and texture come in. If you want flavor, you have to find icing. Again, you could go online and look for a frosting store, or you could go to a specialty food store. You may try red or burgundy food coloring. Don't add too much, or it will be too red. Color will intensify over time. If you want flavor, beauty, and ease, all I can say is the cake and icing under your fondant better be good!! (I'm sure it would be!) : )

Go to a specialty cooking shop and ask for the food colouring powders. These give a far better colour and don't make the icing go all runny as can happen with liquid food colouring. They even have black - so hot pink is not a problem.

If the specialty shop doesn't have food colouring powder, I would suggest you go to the nearest cake shop and ask if they can give you a bit of their commercial pink food colouring.
