My 9 1/2 year old son, & I plan on making homemade cookies for the holidays as gifts, but we need soft & chewy cookies, not hard crunchy.

Plus, my sons homeschooled, & Im useing this as a homeschool project, math= for the measuring, & scopping the right spoonfull.
gym=for the stirring he has to do. (he has skinny little arms), & science for the product you get out of all those ingredients (like a science experiment)

no you can not substitute them... soda is a leavner... if you want soft and chewy cookies you can decrease the soda amount, or add more eggs, that will give you a lighter fluffier cookie more cake like.

Yes, you can. I just isn't a 1 for 1 substitution. It requires a little extra work.

Substitution for 1 teaspoon commercial baking powder: 1/4 teaspoon (1.25 grams) baking soda, 1/2 teaspoon cream of tartar plus 1/4 teaspoon of cornstarch OR 1/4 teaspoon (1.25 grams) baking soda plus 1/2 cup (120 ml) of an acidic ingredient (buttermilk, sour milk or yogurt). Since homemade baking powder immediately releases its carbon dioxide gas when it is added and then moistened by the batter, it is important to bake the batter right away.

Baking powder is not quite the same as soda. It contains cream of tartar and cornstarch. While you could try and substitute, I would use more powder. You didn't explain why you can't just go buy a box of baking soda. It is less than a dollar.

No, because baking soda needs extra acid to make it react and make the cookies rise, which is most likely provided in the recipe already. baking powder comes with the acid in it already.

No. Baking powder and baking soda are two completely different things.

baking soda is sodium bicarbonate, a base.

Baking powder is baking soda and creme of tartar (a base and an acid) plus cornstarch to keep it dry.

It may work, you may need to add a little more baking powder than you would if you were adding just soda.

Baking soda and baking powder only sound like they should be similar. They are not interchangeable at all.

yes, the substitution for baking powder to baking soda is;

1t. baking powder= 1/4t. baking soda+ 1/2c. sour milk

i dont know what the difference is but i just know that you can never substitute one for another
