I don't want my cakes to be tough so stir in the flour just long enough to moisten. My cakes are good, but I still would like to know the rule of thumb for beating.

Always follow the directions but when you don't have any mix the flour into the batter until just incorporated. If you over beat it it will begin to form gluten which will toughen the batter and make it rubbery. The only exceptions I have come across is carrot cake, I've over beaten it and it doesn't get tough. Hope this helps.

Beat until smooth on a low speed (2- 5 minutes). A sponge cake will require longer mixing to beat air into it. You can't really overmix a sweet cake batter since the sugar helps prevent the wheat gluten in the batter from developing and making the cake tough. I would just mix for 5 minutes to make sure the batter is smooth.

If the recipe doesn't say, just beat the batter until all of the BIG lumps are blended in. You'll still have little lumps, but those will bake out. If you try to do it until smooth, you'll end up with a tough cake.

If I make a cake, I beat the batter until is it completely mixed. Much beyond that you end up with fluffy batter in some cases. Not good.

I think the general rule of thumb is a couple of minutes. 30 seconds on high; the rest on med/low. (This is for box cakes. I don't know how you would do it for scratch cakes, but you since you don't want to over-beat them it's probably the same thing.)

cake batters are usually beat smooth. I would say about 3 - 4 minutes.
If your batter is more dense (like loaf or muffin batter) then probably alittle less.

2 minutes at a medium speed is usually the norm. You have to beat the air into it to make it fluffy.
