Okay, time to go Heston on you - a crinkle cut chip has more surface area than a straight cut chip, almost twice as much, because the curves add up to much more than the straight sides of a similar sized chip.

This - along with the points - gives you extra crisp surfaces and variation in textures, and therefore more satisfying crunch and mouth feel.

Straight cut chips are satisfying for eating plain, as well as in a dipping sauce.

However, ribbed, or crinkle cut chips offer more texture to the surface of the chip, allowing it to hold onto more of the salsa, dip, etc that it is being put into before being consumed.

Because the crinkle cut reduces the surface area of the chip that is in contact with the tray. Straight cut chips sit directly on the tray and have a tendency to burn if you don't shake them enough.

I think they taste different anyway ;-)

its all about texture my friend. while the straight cut gives you a definitive single crunch, the waffle or crinkle give you a multi layer crunch with different facets. kind of like a diamond ...you can go with a standard princess cut or go for the marquis cut.... stilll a diamond but very different eye appeal.
personally i go for straight cut chips because I am seeking the salty, oily creaminess of them.

:-)
