If I understand your problem is appears that for you to work is hard but not impossible. I do not understand how you could grow to the age of 35 without a pituitary gland. That makes no sense unless you had the pituitary gland removed. That seems to be a biological feat in itself. As far as the thyroid problem - you don't say if you are hyper or hypo thyroid - both clinical conditions are easily treatable and that would not disqualify you for work.
I would apply for disability if a physican has recommended it but you are terribly young and for you to spend the rest of your life on disability seems a horrible waste. Many people who are in much more severed health problems work all day and love it.
I would recommend you seek advice on the type of work you can do and avoid the disability issue unless you are so handicapped that you cannot function in a work environment.
What you have stated does not make clinical horse sense to me What are we missing in your discription?

Yes you just might be. Have a person in the social work field or medical field assist you in filling the paperwork. If you are denied at first don't get discouraged. You can appeal the denial, you can use a lawyer if necessary.

yes you need to contact your local social security office and get the paper work started it takes a long time to get approved several months my brother had cancer applied and got approved 3 days after he died which is sad to me he battled cancer for 6 months you also need to contact a lawyer who can help you in applying for benefits they will get a percentage of your money if you win alot of people abuse the system but alot of people are really in need i am payee for a friend of mines child who has downs syndrome i have to show where every penny was spent which i don't mind because it is spent on his housing and needs it isn't much but in his situation a little is better than none i also am over his power of attorney and when his mom who is dying can no longer take care of him he will move in with me so that i can take care of him which i will do because i love him and as long as i am able he will have a home and be with people who love him

Social security disability claims are TOUGH to get. They'll ask you if you can get out of bed by yourself, dress yourself, feed yourself. If YES then they say you can work.
What kinda job pays you to get dressed or feed yourself??? My dad had to pay an attorney to get it done. Took 2 more years. He almost lost his home over it.
Talk to some attorneys that specialize in SS disability claims to be sure.

Just be aware they usually deny the first claim but you can appeal and then it will probably go trough.
