You can freeze it but it's not going to thaw out exactly the way it was when it was fresh. If I freeze cheese I usually cut it into small cubes or shred it first and then use it for cooking only. The cheese takes on a different texture after it has been frozen (tastes the same though) and it is impossible to slice it as it will crumble when you try to do this.

Yes course you can, if it is a mild chedder then this will come out pretty okay so long as you don't forget to wrap it well to avoid freezer burn and don't freeze it for too long. Crumbly cheese will crumble a bit more than usual. Soft cheeses such as camembert/brie freeze very well as do hard cheeses like gouda/emmental/edam. These types will freeze well for 3-6 months the normal cheddars for about 1-2 months max really. The cheese will not loose any of its nutrients and will be perfectly edible flavour wise shouldn't be a problem either I have frozen many differing cheeses on hundreds of occasions so I can honestly vouch for what I have said

Yes you can freeze blocks of cheese. The best thing to do when you do this is to get as much of the air out of the package as possible if you happen to put it into a package. This will help prevent freezer burn and also help keep the cheese as fresh as possible.
When you defrost it just set it out for a touch or if you are going to shred it or it is already shredded go ahead in use it but remember that it is going to be rather stiff and easy to break.

Yes you certainly can (except cream cheese, ricotta and cottage cheese).
Always defrost cheese in the fridge and not on the counter, unless you plan on using it within a couple of hours.
