Hi. I have slow cooked roasts, beans, and chickens for up to 24 hours in my crock pot! The crock pot retains liquid very good. That is why there is no need to use too much liquid (i.e. water, broth, etc). So, go ahead and let your crock pot do its job (your job! lol), and have dinner ready for you when you come home. Start your meal at night before you go to bed and cook until the next evening. Hope this has helped. peace.

Second answer may be more correct. I have left pot roast a very long time, turn it on Low! Keep a watch and add about a 1/4-1/2 cup of water if it start to dry up the liquid.

12 hours? wow, you're not making baby food are you? 5-6 hours for a pot roast unless you have a crockpot the size of a bathtub, any longer and you end up with mush for meat. Directions that the company gives you are "General" directions for all their product lines, I could see the lowest wattage C'pot cooking longer but a high end 300 watter is going to cook faster even though they call it a slow cooker. Look at the bottom and see what range you're in

I would think that after 12 hours, the meat would be mushy, and you're running the risk of the liquid cooking away. 8 to 12 hours on Low usually produces a tender, juicy roast, and I can't see any advantage of cooking it longer.

I've left the crock pot on low (only low) for almost 24 hours. The longer the better if you ask me...

I wouldn't leave it more than 12 hours. I found less than good results with a couple of meat recipes (chicken) that I left in longer than suggested.

I would probably start checking it after about 8 hours if you can. And there is a possibility that the liquid could dry up, but you can always add more.
