Asian Lettuce Wraps for 30 people
INGREDIENTS
120 Boston Bibb or butter lettuce leaves
7-1/2 pounds lean ground beef
1/3 cup and 2 tablespoons and 1 teaspoon cooking oil
7-1/2 large onion, chopped
15 cloves fresh garlic, minced
1/3 cup and 2 tablespoons soy sauce
1-3/4 cups and 2 tablespoons hoisin sauce
1/4 cup and 1 tablespoon minced pickled ginger
1/3 cup and 2 tablespoons rice wine vinegar
Asian chile pepper sauce (optional)
7-1/2 (8 ounce) cans water chestnuts, drained and finely chopped
7-1/2 bunches green onions, chopped
1/4 cup and 1 tablespoon Asian (dark) sesame oil
DIRECTIONS
Rinse whole lettuce leaves and pat dry, being careful not tear them. Set aside.
In a medium skillet over high heat, brown the ground beef in 1 tablespoon of oil, stirring often and reducing the heat to medium, if necessary. Drain, and set aside to cool. Cook the onion in the same pan, stirring frequently. Add the garlic, soy sauce, hoisin sauce, ginger, vinegar, and chile pepper sauce to the onions, and stir. Stir in chopped water chestnuts, green onions, and sesame oil, and continue cooking until the onions just begin to wilt, about 2 minutes.
Arrange lettuce leaves around the outer edge of a large serving platter, and pile meat mixture in the center. To serve, allow each person to spoon a portion of the meat into a lettuce leaf. Wrap the lettuce around the meat like a burrito, and enjoy!
24 Hour Layered Salad
INGREDIENTS
1-1/4 heads leaf lettuce, torn
1-1/4 bunches fresh spinach, torn
2-1/2 cups sliced celery
2-1/2 cups sliced fresh mushrooms
12-1/2 hard-cooked eggs, sliced
5 cups peas
1-1/4 green bell pepper, chopped
12-1/2 green onions, sliced
5 (8 ounce) cans sliced water chestnuts, drained
2-1/2 cups mayonnaise
2-1/2 cups sour cream
1/4 cup and 1 tablespoon white sugar
3-3/4 cups shredded sharp Cheddar cheese
1/2 cup and 2 tablespoons crumbled cooked bacon
DIRECTIONS
Toss together the lettuce, spinach, celery, mushrooms, eggs, peas, bell pepper, green onions, and water chestnuts in a 9x13 inch dish. Mix the mayonnaise, sour cream, and sugar in a bowl, and spread evenly over the salad to the edges of the dish. Sprinkle with Cheddar cheese, and top with bacon. Cover and refrigerate 24 hours before serving

BUTTER LETTUCE AND MUSHROOM SALAD
2 c. mushrooms, sliced
2/3 c. salad oil
1/4 c. vinegar
1 tbsp. sugar
3 cloves garlic
1 or 2 heads butter lettuce
Salt and pepper
Wash lettuce and drain well. Slice mushrooms. Make dressing of oil, vinegar, sugar, and garlic. Toss torn lettuce, mushrooms, and dressing. Serve immediately.
You would have to increase the amount to serve that many people.

Bacon-Lettuce-Mozzarella-and-Tomato Salad:
1 (16-ounce) bottle vinaigrette
1/3 cup lime juice
8 ounces mozzarella cheese, cut into 1/4-inch-thick slices
1 (16-ounce) unsliced French or Italian bread loaf
1 large head Bibb lettuce
6 plum tomatoes, cut into 1/4-inch-thick slices
12 thick bacon slices, cut into thirds and cooked
Stir together vinaigrette and lime juice. Place cheese slices in a 13- x 9-inch baking dish; drizzle with 1 cup vinaigrette mixture, and set remaining vinaigrette mixture aside. Let cheese stand 20 minutes.
Slice top one-fourth off bread loaf. Scoop out bread, leaving a 1-inch-thick shell. (Reserve top and center for other uses.) Place shell on a baking sheet, and brush inside evenly with 1/2 cup vinaigrette mixture.
Bake at 400° for 12 to 15 minutes or until golden; cool. Line bread bowl with lettuce. Fill with tomato and cheese; top with bacon. Serve with remaining vinaigrette mixture.
Note: For vinaigrette, we used Paul Newman's olive oil vinaigrette.
Yield: 4 to 6 servings

Asian Lettuce Wraps are really good. You may have difficulty making it for so many people, however.

Ingredients for the filling:
Prawn, mushroom, chicken, asparagus and other vegies stir fry with soy sauce, oyster sauce, ginger and garlic.
