Yes, You can use olive oil. It's alot better for you. There are different types. There is light olive oil (doesn't have a very strong flavour, isn't any lighter on calories though!), extra virgin olive oil has been pressed many times I think and is very nice on salads etc(its a better quality/more expensive olive oil although its still affordable) or you can use just regular olive oil.
My Mum used to cook with vegetable oil but stopped because it is full of bad fats which is bad for your bad cholesterol levels and eyes (increases your chance of poor eyesight/going blind in the long term I think). Olive oil is the best type of oil. If you don't want a strong flavour coming through simply use light olive oil. Butter can be used for rich things or browning but it burns easily. Stop using margarine! It's got lots of trans fats and other animal fat etc. Butter is so much better for you in terms of your inside health plus it has about the same amount of calories. If you love margarine spread on bread etc, try to choose one like devondale brand (I live in Australia) which has about 75% butter. It spreads easily and is so much better for you in the long term.

it depends what do you need it for. There are such things you can use as canola oil, peanut oil, sesame seed oil, olive oil, lard, yes you have many things you can pick from even butter or margin it depends what you need it for. Just let me know and I'll tell you! Good luck!

If you are making something like muffins, you can replace about one third of it with applesauce. Do not replace all of it as you need some of it for the recipe to work.
