Most cookie recipes use butter, margarine or shortening. But if one did call for oil you could substitute apple sauce for it.

No. I use butter. I never use vegetable oil. I use light olive oil in some cakes with some butter to make it nice and moist though.
You should try using light olive oil (light in flavour) or regular olive oil in place of vegetable oil. Do you really know what vegetables the oil comes from? The answer is NO! How many vegetables have lots of oil? If they used oil from the vegies like capsicums/peppers it would be expensive to buy and it isn't. Doesn't that bother you? Vegetables aren't high in oil.Vegetable oil has bad fats in it. They put all sorts of nasties in it. Olive oil has essential fats..so much better and nicer in flavour too.
Anyway, use butter in cookies (don't use margarine, that's really bad for your eyesight etc in the long term)!

You can substitute apple sauce in many recipes for oil. I made muffins yesterday and replaced it and they came out great.

In some recipes, maybe. But most use butter or shortening for the fat.
