Just a few things to add to what others posted:
Are you going to be in CA THIS Sunday? Sad to say, the Matterhorn is currently closed (through Fri Dec 15) for scheduled maintenance.
-Check out mouseplanet.com for notes and other scheduled closers. Go to disneyland.com and click on the calendar for park hours and parade and fireworks schedules.
-Call 714-781-DINE to make reservations for sit-down restaurants like Carnation Cafe and Blue Bayou. A GREAT timesaver.
-Save time in Hollywood. Just see the Chinese Theater, Walk of Fame, then Hollywood & Highland complex. The rest of Hollywood is not glamorous at all.
-Gastronomically speaking, there are some places that define LA: SoCal is the Burger Capital of the World, and In-N-Out Burger, without a doubt, is the best place to get one. Order a Double-Double with grilled onions. Another famous burger place is Tommy's, which serves chili burgers. Not healthy for you at all, but definitely comfort food for us locals. Pink's Hot Dogs on La Brea in L.A. is pretty famous, you might even see a celeb there. If you go to Olvera Street, you should walk a couple blocks to Phillippe's on Alameda, just down from Union Station. Have a French Dip Roast Beef Sandwich. Watch out for the mustard, it's pretty hot!

There is sooooo much to do. If this is your first visit and you have more than a day - you'll have fun. If you only have a day, you'lll probably end up feeling like you missed some things. Try the Matterhorn for sure. If you get a 'park hopper' which will allow you into California Adventures - right next to it and merely a one minute walk from gate to gate, you HAVE to go on California Screamin' and Soaring Over California. Also, the Hotel - can't think of the name right now, but you can't miss it. Warning: Do not go on this if you are faint of heart. Oh! And the best show is Alladin - not the little one at Disneyland, but the main show at California Adventures.
So not really answering your question here, am I? Sorry! Um, Disneyland...yes - go on Pirates of the Carribean. They just spent months and millions to re-do it and it's great! I'm a big fan of Splash Mountain, but only when it's hot outside - you WILL get wet. There's so much to do - especially if you have children. The rides I mentioned are all for older ones, not wee ones.
Have fun! Get the park hopper if you can - definitely worth it. I live in So Cal and have season passes, which allows you into both parks - I so prefer CA Adventures over Disneyland for myself, but Disneyland over CA Adventures for my daughter.

I love Disneyland! Couple of pointers from someone who has been a lot -
Get there early! If you get there about 1/2 before the park opens, you can park easily and miss the long lines to get into the park. Once you are in, enjoy main street but don't stop - head left into Adventureland and go to town! (most people go to Tomorrowland first and it gets crowded quick!) Hit the Indiana Jones ride, Pirates of the Caribbean (if it's open - it may be undergoing remodeling right now). Hit the Haunted Mansion, the Pooh ride (which is dorky but a blast!) and don't miss Mr. Toad's wild ride in Fantasyland. Make sure to take advantage of the fast pass for the rollercoasters - and have a great time!

Get the park hopper tickets, so you can visit both the classic park and the new California Adventure.

The Haunted Mansion (caveat: it is made up like the "Nightmare After Christmas" movie...kinda lame. If you hit it after January it'll be back to normal.)

Big Thunder Mountain
Space Mountain

In California Adventure:
Soarin
The Screamer
Hollywood Tower of Terror
It is very hard to see both parks in one day...plan on two if you can. Visit during the weekdays...lot less crowds, but park hours are not as long. Friday days are not bad at all until night.

Be sure to take the train and monorail around Disneyland, so you can see some of the sights and plan your time in each land. There is a great place to have lunch or dinner inside Pirates of the Caribbean (The Blue Bayou). You can save $ by staying at a hotel/motel near D-land as the D Hotel is a bit pricey.
Be sure to see the fireworks show at 9PM each night. Also, the roller coaster rides, Tom Sawyer Island, concerts at night. It's all good....
Bring your camera. You will want to take lots of pics. Make sure to see Abraham Lincoln on Main St. Have lots and lots of fun....

The ocean. Everything in the country of California besides the ocean is useless. Oh, watch out for the drivers too. I would get the most insurance I possibly could on my car before venturing into Anaslime, or California for that matter.
