Well I zap my veggies in the micro in a bowl not complicated. I am somewhat finicky though I only will eat broccoli or Brussel sprouts. I found 2 that I do like and prefer to stick to those. Also consider one cup of a green veggie that you can tolerate and melting half a slice of fat free cheese on top. The minimal added calorie content in the cheese is not that bad and you have eliminated the fat content. If it keeps you eating your greens then it is a very beneficial way to go.
Stir fry is not a healty alternative especially if you use any hydrogenated oils or oils containting saturated fats!
Also liquid calories are the worse since there is no thermic burning process associated in burning off liquid calories so V8 isn't a viable healthy alternative either.

Well I can only speak from experience. I have 2 kids ages 6 and 7. My 6 year old daughter LOVES and prefers vegetables. She has since she was a baby eating babyfood. She eats beets and cauliflower with no problem. My 7 year will eat veggies but not with the same enthusiasm as his sister. I think if vegetables are introduced to a child before fruits they will eat them easier. And I did this with my 2nd child and she will pick peas over jello. She does prefer fresh veggies over canned or frozen. And a pat of butter (not margarine) and a sprinkle of seasoning helps my son.

I'm the exact opposite, I love veggies and am not a big fan of fruit! Salads are great because they are raw and green leafy vegetables are sooo good for you. Try using spinach, cucumbers, radishes and carrots, and any other veggies you like raw.
Also, try steaming your veggies with a little olive oil sprinkled over top and some cut up onions, yum! Also, try boiling some kale with olive oil and onions, very yummy! You can also drink vegetable juice. Juicing them yourself is preferable, but some good veggie juice (better than V-8) is really good too; by the kind that is spicy for a better taste.

I'm a HUGE veggie person, the trick is to juice up your veggies. Stir fry broccoli and green snap peas with some lean meat in teriyaki sauce.
Take fresh green beans or asparagus and saute them in a little olive oil, lemon juice and garlic (about 10 minutes)
Slice some eggplant in 1/2 inch circles, brush with olive oil and sprinkle with garlic powder and black pepper--grill for 7 minutes on each side.
Vegetable soup is GREAT for getting those veggie servings in, so is a basic stirfry.
Edamame is a GREAT snack for you, and you can buy them deshelled, all you do is defrost, sprinkle with salt and snack!

Do you like Vegetable juice?
Mushrooms, Peppers (capsicum), courgette, celery, cucumber onions, white and red cabbage, spinach (really good for you) they can all be eaten raw, you can try them with some dip as well thats really nice
Just try some more veggies. You might come to like them eventually

Chinese stir fry cooking ( their vegetables are just as healthy as the traditional American selection but taste better and you can stir fry ALL of the traditional vegetables also with a Chinese sauce and they will taste great - experiment - if cooked this way they are a lot better than the steamed or boiled stuff you are used to )

Have you tried cooked greens, like collards, chard, beet greens, bok choy, and so forth? Keep trying new ones until you find several you like.
