When I do cut out sugar cookies for my sons school I use the Pilsbury roll of sugar cookie dough. Cut the roll in half. Put one half in the fridge so that it will stay firm while you work with the other. Put down wax paper and flour it. Roll out the dough in the flour and then cut out the cookies with your cookie cutters. A little flour on the cutters helps too! After they cool I frost them. Put some powdered sugar in a bowl and add a little milk. Stir it up. Just a little milk so that it is very, very thick and hard to spread but all the lumps are out. If you add food color even less milk. Then frost them. All the teachers at my son's school go on and on about the cookies and beg for the secret recipe. It is so crazy!!! I just can not tell them how simple it is!

1 cup granulated sugar
1 cup softened butter
3 ounces cream cheese, softened
1/2 teaspoon salt
1/2 teaspoon almond extract
1/2 teaspoon vanilla
1 egg yolk (reserve white)
2-1/4 cup all-purpose flour

In large bowl combine sugars, butter, cream cheese, salt, extracts and egg yolk; blend well. Stir in flour until well blended. Chill dough for 2 hours. Pre-heat oven to 375 F. On lightly floured surface, roll out dough, one-third at a time to 1/8-inch thickness. Cut into
desired shaped with lightly floured cookie cutter. Place 1 inch apart on ungreased cookie sheet. Leave cookie plain, or brush with lightly beaten egg white and sprinkle with colored sugar. Bake for 7-10 minutes or until light golden brown. Cool completely on wire racks.
