Just about any 5 or 6 star hotel/resort will be suitable. They are all immaculately and beautifully landscaped
If you are Catholic, well there is the church in the centre of town. It doesn't get any better when it comes to quaintness.
My wife and I are very fond of Le Bistro. It's a restaurant, and not a caterer. So, they could accommodate several dozen people for a dinner reception, but not several hundred. Lunch, maybe. They are on the Internet. Food leans toward French, and is Very Good.
About $24-$30 per., but Worth it. Check about a dance floor!
It's romantic, in a romantic setting.
Depending on the time of year, and guests Playa Los Arcos may be able to accommodate you. Canto Del Sol, Pelicanos. Well just about all of them.
Avoid Nueve Vallarta, it;s too far from the action.

all of these are in the romantic zone and conchas chinas on the south part of town I find it to have a much more romantic and traditional feel I find the larger hotels in the marina and neuvo vallarta could be anywhere they have no wrmth to them some are beautiful the riu in particular but they could just as well be miami beach or california

If you like an outside wedding you could do it along the Boardwalk with the Bay to your back...
Or El Panorama Restaurant is one of the taller building in old downtown and you could have a pretty view of downtown and the water. Possibly an evening ceremony with the sunset as the backdrop...

Cuernavaca is a superb holiday spot for a marriage ceremony, i latterly went to one held a Las Mananitas there. the climate is advantageous all three hundred and sixty 5 days around so as which you will have an outdoors wedding ceremony ceremony. Plus the section near to Mexico city makes it undemanding for travellers to fly in.

WESTIN RESORT & SPA PUERTO VALLARTA
i just went there this summer for a wedding and it was beautiful
