I buy block cheese and shred it so I can have more for my money, and usually do. But the cheese shreads, and then bonds together; so all my newly shreaded chees looks like one big glob of cheese. Afther the cheese is shredded, I feel bad for doing all that work for nothing if it's just gonna just merge together and I have to break it up in chunks.

Anymore it's about the same price to buy the already shredded cheese. I think they sprinkle something on it to separate it a bit, though I don't know what they do. Make sure that if you are using a box grater that you slide the cheese across a few times and then move that stack elsewhere, as the pressure probably causes the lumping together.

I think they put flour or something on their shredded cheese in the store. You should only shred your cheese right before you're going to use it to prevent it's sticking together.

Machine-shredded cheese is then covered in a "meal" or a "powder" to keep it from clumping back up. Maybe you could try sprinkling a little cornmeal on your newly-shredded cheese, if you weren't worried about changing the taste.

It is because of the presssure you place on it from the shredder. When done shredding, fluff with a fork and set it back in the fridge for about ten minutes.
(cheese gets softer @ room temp.)
