Little olive oil on the skin and under, season as you like, I would use garlic salt and pepper. Put some fruit like lemons or oranges in the cavity or if you prefer some veggies like celery, carrots, taters, tie the back legs together, put in your baking dish with a bit of water on the bottom, a roasting rack would help if you have one, cover and bake at 350 for about 45 minutes, take the cover off the last 15 minutes to let the skin crisp up. Also remember once you take it out of the oven to let it rest for about 15 minutes

Roasting a chicken is easy, you don't need to follow an exact recipe. Variations might be to mix butter with your favorite seasonings and put that outside and inside the skin. Also you can put all kinds of veggies in the baking dish too around the chicken.

This is a new recipe that I tried and makes a very moist chicken. I didn't make it with the gravy. Although it states chicken pieces, I just placed the entire chiicken into a freezer bag along with the marinade. Roasted chicken 1/4 cup balsamic vinegar 2 tablespoons Dijon mustard 2 tablespoons fresh lemon juice 2 garlic cloves, chopped 2 tablespoons olive oil Salt and freshly ground black pepper 1 (4-pound) whole chicken, cut into pieces (giblets, neck and backbone reserved for another use) 1/2 cup low-salt chicken broth 1 teaspoon lemon zest 1 tablespoon chopped fresh parsley leaves Whisk the vinegar, mustard, lemon juice, garlic, olive oil, salt, and pepper in small bowl to blend. Combine the vinaigrette and chicken pieces in a large resealable plastic bag; seal the bag and toss to coat. Refrigerate, turning the chicken pieces occasionally, for at least 2 hours and up to 1 day. Preheat the oven to 400 degrees F. Remove chicken from the bag and arrange the chicken pieces on a large greased baking dish. Roast until the chicken is just cooked through, about 1 hour. If your chicken browns too quickly, cover it with foil for the remaining cooking time. Gravy: Transfer the chicken to a serving platter. Place the baking dish on a burner over medium-low heat. Whisk the chicken broth into the pan drippings, scraping up any browned bits on the bottom of the baking sheet with a wooden spoon and mixing them into the broth and pan drippings. Drizzle the pan drippings over the chicken. Sprinkle the lemon zest and parsley over the chicken, and serve.

Spicy Rapid Roast Chicken

Original recipe yield:

PREP TIME 15 Min
COOK TIME 1 Hr
READY IN 1 Hr 30 Min

INGREDIENTS
1 (3 pound) whole chicken
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon paprika
1/8 teaspoon cayenne pepper


DIRECTIONS
Preheat oven to 450 degrees F (230 degrees C).
Rinse chicken thoroughly inside and out under cold running water and remove all fat. Pat dry with paper towels.
Put chicken into a small baking pan. Rub with olive oil. Mix the salt, pepper, oregano, basil, paprika and cayenne pepper together and sprinkle over chicken. Place lid on.
Roast the chicken in the preheated oven for 20 minutes. Lower the oven to 400 degrees F (205 degrees C) and continue roasting 40 minutes, to a minimum internal temperature of 180 degrees F (85 degrees C). Let cool 10 to 15 minutes and serve.

"Garlic Clove Chicken" - 6 servings

1 roasting chicken (5 to 6 lbs.)
1 small onion; quartered
40 garlic cloves; peeled
1/4 cup vegetable oil
1 1/2 tsp. salt
1 tsp. dried parsley flakes
1/2 tsp. dried celery flakes
1/2 tsp. EACH dried tarragon, thyme and rosemary; crushed
1/4 tsp. pepper

Place chicken, breast-side up, on rack in shallow roasting pan. Place onion in chicken; tie drumsticks together. Arrange garlic cloves around chicken. In small bowl, combine remaining ingredients; drizzle over chicken and garlic.
Cover and bake at 350* for 1 3/4 hours. Uncover; bake 30-45 minutes longer or until meat thermometer reads 180*, basting occasionally. Cover and let stand 10 minutes before slicing.

i cut 2 lemons in half, squeeze the juice all over the bird. Put the lemons inside the chicken, then i just season the whole thing inside out with salt pepper and poutlry seasoning. I put about an inch of chicken broth in the bottom of the pan. easy. mine was 3 lbs and i cooked it for about an hour.

ingredients:
oil
red pepper flakes
one cup of rice
two cups chicken broth
chicken
sliced green grapes and diced green peppers

first warm a tablespoon of oil in a saute pan with red pepper flakes. add and stir one cup of rice in until the oil is absorbed in the rice and it browns. place the rice in your pan. add two cups chicken broth. on top of the rice place the chicken. cover and bake for about an hour at 400. when you can smell the chicken and test it and its done serve with sliced green grapes and diced green peppers over the rice . unusual but delicious- you'll crave this one!
