1/2 cup water
4 ounces white confectioners coating or vanilla chips
1 cup butter or margarine, softened
2 cups sugar
4 eggs, separated
1 tablespoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 cup buttermilk
1 cup flaked coconut
1 cup chopped pecans
FROSTING:
1 (8 ounce) package cream cheese, softened
1/2 cup butter or margarine, softened
1 teaspoon vanilla extract
3 3/4 cups confectioners' sugar
1 tablespoon milk
DIRECTIONS
In a saucepan, bring the water to a boil. Remove from the heat; stir in confectionery coating until melted. Cool for 20 minutes. Meanwhile, in a mixing bowl, cream butter and sugar. Add egg yolks; mix well. Beat in coating and vanilla. Combine flour and baking soda; add to creamed mixture alternately with buttermilk. Mix well. Stir in the coconut and pecans. Beat egg whites until stiff peaks form; fold into the batter. Pour into three greased and floured 8-in. square baking pans. Bake at 350 degrees F for 25-30 minutes or until cake tests done. Cool in pans 10 minutes; remove to wire rack to cool completely.
Combine frosting ingredients in a mixing bowl; beat well. Frost tops of two layers; stack on serving plate with plain layer on top. Frost top and sides of cake.

FILLING:

2 teaspoons lemon juice
DOUGH:
1 cup butter or margarine
1 cup packed brown sugar
1 cup sugar
3 eggs
1 teaspoon lemon extract
4 cups all-purpose flour
1 teaspoon salt
3/4 teaspoon baking soda
DIRECTIONS
In a saucepan, combine filling ingredients. Cook over medium-low heat, stirring constantly, until mixture becomes stiff, about 15-20 minutes. Chill.
For dough, cream butter and sugars in a mixing bowl. Add eggs, one at a time, beating well after each addition. Add extract. Combine flour, salt and baking soda; gradually add to creamed mixture and mix well. Chill for at least 1 hour.
On a lightly floured surface, roll out half of the dough to a 12-in. x 9-in. rectangle, about 1/4-in. thick. Spread with half of the filling. Roll up, starting with the long end. Repeat with remaining dough and filling. Wrap with plastic wrap; chill overnight.
Cut rolls into 1/4-in. slices. Place 2 in. apart on greased baking sheets. Bake at 375 degrees F for 8-10 minutes or until lightly browned. Cool on wire racks.

Pumpkin cheesecake! It's always a hit whenever I take it to a party.

1 1/2 cups vanilla wafers, crushed into crumbs
1 cup ground pecan pieces
1 stick melted butter
2 pounds cream cheese, softened and cubed
1 cup light brown sugar
6 eggs
1/2 cup heavy cream
1/2 cup all-purpose flour
Pinch salt
1/2 teaspoon cinnamon
1 teaspoon vanilla
2 cups pumpkin puree

Preheat the oven to 350 degrees F.
Combine the crumbs, ground pecans and the butter together. Mix well and press into a 12-inch spring-form pan. In a food processor, with the metal blade, mix the cream cheese until smooth. Add the brown sugar and blend. Add the eggs 1 at a time to thoroughly incorporate into the cheese mixture. Add the heavy cream. Add the flour, salt, cinnamon and vanilla and blend until smooth. Add the mashed pumpkin and blend until smooth.
Pour into the prepared pan. Bake for 1 hour and 15 minutes or until the cake is set. Remove from the oven and with a knife loosen the sides from the pan. This will prevent the cake from splitting down the center. Completely cool the cake before cutting.

Grandma's Tasty Layer Dessert

9x13 German Chocolate Cake mix, prepared and cut into 1-inch squares
1 jar of caramel ice cream topping
2 large boxes of instant chocolate pudding mix, prepared
1 large carton of cool whip
6 Heath candy bars, crushed

Layer in a big glass bowl repeating layers twice. Easy and delicious! My grandma makes this every Christmas for dessert. It's big and will feed a lot of people.

Get a pre-made graham cracker crust.

Mix 1-8 oz package cream cheese, softened, with 1-8 oz carton Cool Whip, adding just a touch of powdered sugar. Pour into crust.

Mix one box chocolate pudding according to package directions. Pour on top of cream cheese mixture.

Top with shaved white chocolate, and chill.

Nutty Cookies

1 stick margarine
7 tablespoons powdered sugar
1 teaspoon vanilla
1 cup plain flour
1 cup nuts, finely chopped (optional)

Cream ingredients together. Make in balls the size of a meat ball. Bake at 300 degrees until lightly brown. roll in powdered sugar, twice.

These cookies resemble little snow balls good for Christmas..Enjoy...

Get a bag of choclate chips, 1 can condensed milk, 1 pack of graham crackers, 1 cup of chopped walnuts, 1 bag of coconut, and a large cassarole dish, crush crackers into fine crumbs layer bottom of dish with some melted butter ,not to much ,just so the crumbs stick, put half chips on top ,put 2/3 of nuts on top of chips, then put all of coconut on top of that , put the rest of chips and nuts,then pour the can of milk all over top, bake 350 20 min. or until coco browns...... "Cherry Cream Cheese Pie"

1 (9") graham cracker crumb crust
1 (8 oz.) pkg. cream cheese; softened
1 (14 oz.) can sweetened condensed milk
1/3 cup lemon juice
1 tsp. vanilla extract
1 (21 oz.) can cherry pie filling; chilled

In large mixing bowl, beat cheese until fluffy; gradually beat in condensed milk until smooth. Stir in lemon juice and vanilla; pour into prepared crust. Chill 3 hours or until set; top with desired amount of pie filling before serving. Refrigerate leftovers.

A cute idea...

get cherries with stems and cooking chocolate to melt, icing and hershies kisses

melt the chocolate and dip the cherries in it
lay them on a wax paper or aluminum foil cover surface
put a kiss on the smooth part of the cherry (not the end with the stem)
let them cool themn get the icing
put 2 dots for eyes on the kiss, and you've got mice.

there are many recipe sites online that have unique ideas for christmas treats. recently i made home made marshmallows and sprinkled them with green and red sprinkles. you could make brownies and top them with a layer of the homemade marshmallows. since you put them in a pan like you would bake brownies in, the finished product will be the exact size you need and put a unique twist on a favorite treat. homemade marshmallows aren't as sickeningly sweet as ones you buy in the store, amazingly they are easy to make! you could even put food coloring in the mixture and make them green or red.

Easy one. Rice or bread pudding. Myself I like either one especially with walnuts and or raisins.. Need help go to .....cooks,com.....Great site for good recipes and ideas By the way a little bit of dark RUM adds a nice touch..Don't worry about the alcohol it cooks off......
