I have a friend who just found out he's diabetic. For christmas I wanted to makle his favorite cookie sugar free for him. His favorite cookie is the snickerdoodle. Does anyone have a recipe? thax

SNICKERDOODLE

1 cup butter
3/4 cup SPLENDA
3/4 cup Sugar Twin
2 eggs
2 teaspoons vanilla
2 3/4 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt

For extra cinnamon flavor, add cinnamon to batter, too.
2 Tablespoons SPLENDA
2 teaspoons cinnamon

Cream butter and sugars, add eggs and beat till creamy.
Gradually add dry ingredients, beating until blended. Roll
teaspoons of batter into a ball, roll in Splenda/cinnamon
mixture. Flatten with a moist glass bottom.

Bake at 375 for 8 to 10 minutes.

My Homemade (Kinda) Snickerdoodles: I Package of Betty Crocker Sugar Cookie Mix 1/2 Cup of Butter 1 Egg Cinnamon (Amount optional) 1.Preheat Oven to 350 Degrees F 2. Mix Cookie Mix, butter, and egg. Mix well until dough-like. With floured hands, make a ball out of the dough. Place in Seran Wrap, and refrigerate for an hour. After an hour, take out and split dough in half. Roll out into a 5' by 5' square, and sprinkle cinnamon on it. Rub cinnamon in the dough, until smooth. Roll into log, and place aside. Do the same with the other half. 3. Refrigerate Logs for 20 minutes. Take out, and cut into inch long bite sized cookie dough pieces. Place on greased cookie pan. Mix 1 Tablespoon of Cinnamon and 1 Teaspoon of Sugar, and sprinkle on the insides of the cookie. Bake for 10 minutes, or until bottom is golden brown. It's ok if it's soft, because it will harden while cooling.

Splenda has a sugar:splenda ratio.........Try substituting it. Equal tastes better in recipes than Splenda.
