i wanna cook a special for my bf .... he likes meat a lot , salads, potatoes... and chocolate or some kind of pudding like rice pudding that is not so sweet... any ideas?

Oven Fried Chicken (very tasty seasoning and easy to make)

¼ t red pepper
1 cup cornflakes crushed
1 t paprika
½ t garlic powder
¼ t ground thyme
¼ cup buttermilk
6 chicken breasts halved

Combine 1st 5 ingredients in plastic bag. Skin breasts and brush both sides with buttermilk. Place chicken in bag of crumbs and shake to coat. Place chicken on broiler pan that has been sprayed with vegetable spray. Bake at 400° for 45 min. or until done. 6 servings. Other pieces of the chicken can be used for this recipe.

Stuffed Peppers (vegetable and meat, these can serve either as a side dish or an main meal)

1 lb ground beef
½ cup chopped celery
½ cup chopped onion
1 t chili powder
1 can tomato soup
½ t dry mustard
½ can water
½ t blk. Pepper
2 T Worcestershire
½ t salt
2 cups cooked rice
6 lg. bell peppers
1 can tomato sauce
1 cup grated cheese, optional
1 t Accent

Lightly brown ground meat. Thoroughly drain and use paper towel to absorb excess grease. Add all ingredients together except cheese and tomato. Sauce and peppers: stuff peppers equally with mixture. Place peppers upright in baking dish. Spoon tomato sauce evenly over peppers. Bake 45 min. at 325°. If desired, grated cheese can be sprinkled over peppers during last 10 min. of cooking time.

Hot Fudge Pudding Cake (very very yummy!)

1½ cups sugar, divided
1 cup all purpose flour
7 T Hershey’s cocoa, divided
2 T baking powder
¼ t salt
½ cup milk
⅓ cup butter melted (or oleo)
1½ t vanilla
½ cup lt. brown sugar, packed
1¼ cup hot water

In medium mixing bowl combine ¾ cup sugar, flour, 3 T cocoa, baking powder and salt. Blend in milk and melted butter and vanilla. Beat until smooth. Pour batter into greased and floured 8” x 8” x 2” or 9” x 9” x 2” pan. In small bowl combine remaining ½ cup sugar, brown sugar and 4 T cocoa; sprinkle evenly over batter. Pour hot water over top. Do not stir. Bake 40 minutes at 350°. Let stand 15 minutes, spoon into dessert dishes, spooning sauce from bottom of pan over tops.

You can never go wrong with the good ol' grilled steak, baked potato and loaded salad.

My hubby likes a plain chocolate pudding cake. Just make a chocolate sheet cake as directed. Let it cool and poke some holes all over the cake with the handle of a large spoon. Take a small box of chocolate pudding and make it according to directions and pour this over the cake. When the pudding has set up, you will have a delish cake ready to serve up.

What can you cook already?

Let's assume you have almost no skills and try something special.

Appetizer: Let's make this simple- grab something frozen and serve it nicely! Even things like pizza rolls can look sharp if served on a nice dish with a bit of parsely for decoration.

Main Dish: Deli chicken. Ask the deli folk about how to reheat it, and ask them for ideas for making it fancier. I'd try an orange or plum glaze (heat up some good quality orange or plum jelly or marmalade to thicken. Stir in a bit of red wine if you have any.)- brush it on thickly and reheat. Serve on a bed of lettuce with more parsely for decoration.

Veggies: Choose any frozen mixed veggies that look good (I like California Mix) and prepare per directions. When finished, put in a casserole dish and sprinkle heavily with breadcrumbs, parmesian cheese, a dash of salt, pepper, and garlic powder. Lightly sprinkle with olive oil (optional) and bake until a nice browned crust is formed.

Potatoes: Buy the twice-baked taters and reheat (or make your own- they are not tough!)

Salad: I'd buy a good selection of salad items form the salad bar at the store and buy a bottle of good dressing.

Dessert: Try individual Baked Alaskas: Basically, all this is is a scoop of flavorful ice cream on a serving of cake, brownie, or cookie base. Freeze solid. Whip up some merangue (spelling?) and coat the treats thickly- sealing the merangue to the baking pan- leave NO gaps! Bake at 500 for a couple of minutes to brown the coating without melting the insides. I'd skip the traditional 'flambe' bit!

How about the classic: A steak (MR), Baked potato w/ sour cream, a nice salad w/ French and Bleu Cheese dressing, and save dessert for after the loving so he's not too full!

how about mashed potatoes with cheddar and garlic in the mixture with meat loaf or breaded pan fried chicken breast and side of cream corn

"Sweetheart Steaks" - 2 servings

3 tbsp. Catalina salad dressing
3 tbsp. honey
3 tbsp. apricot preserves
3 tbsp. grape jelly
2 tbsp. minced chives
2 tbsp. balsamic vinegar
2 tbsp. olive oil
2 tbsp. catsup
1 tbsp. soy sauce
3 garlic cloves; minced
1 tsp. ground mustard
1 tsp. Worcestershire sauce
1/2 tsp. salt
1/2 tsp. crushed red pepper flakes
1/4 tsp. pepper
2 beef tenderloin steaks (1 1/2 to 2" thick)

In small saucepan, combine first 15 ingredients; bring to a boil. Reduce heat; simmer, uncovered, 30 minutes, stirring occasionally. Set aside 1/4 cup sauce for serving, and keep warm.
Place steaks on broiler pan; top with some of the remaining sauce. Broil 4 to 6" from heat for 10-16 minutes on each side or until meat reaches desired doneness, basting occasionally with remaining sauce. Serve with reserved sauce.


"Cheese-Stuffed Potatoes" - 2 servings

2 medium baking potatoes
1 small onion; finely chopped
2 tbsp. water
1/2 cup cottage cheese
1/4 cup buttermilk
3 tbsp. grated Parmesan cheese
Salt and pepper to taste
2 tbsp. thinly sliced green onion (scallions)

Bake potatoes at 400* for 1 hour or until tender. Cut a thin slice off the top of each potato and discard. Scoop out pulp, leaving a thin shell. In small mixing bowl, mash pulp; set aside.
In small skillet, cook and stir onion in water for 2 to 3 minutes or until tender. Add mashed potatoes, cottage cheese, buttermilk, Parmesan, salt and pepper; stir until blended and heated through. Spoon into potato shells; sprinkle with green onion.


"Valentine Cakes" - 2 servings

3/4 cup all-purpose flour
1/4 cup sugar
1/4 cup packed brown sugar
3 tbsp. baking cocoa
1/2 tsp. baking soda
1/8 tsp. salt
1/2 cup water
3 tbsp. vegetable oil
1/2 tsp. white vinegar
1/2 tsp. vanilla extract
FROSTING:
1 1/3 cups confectioners' sugar
2 tbsp. baking cocoa
2 to 3 tbsp. milk
2 tbsp. butter; melted
1/4 tsp. vanilla extract

In mixing bowl, combine first 6 ingredients; add water, oil, vinegar and vanilla. Pour into greased and floured 8" square baking dish. Bake at 350* for 15-20 minutes or until a toothpick inserted near center comes out clean. Cool 10 minutes before removing from pan to wire rack to cool completely.
In mixing bowl, beat confectioners' sugar, cocoa, milk, butter and vanilla until smooth; set aside. Transfer cake to work surface. Using a 3 to 3 1/2" heart-shaped cookie cutter, gently cut out four heart-shaped cakes (set cake trimmings aside for another use).
Place one heart on serving plate; spread with some frosting. Top with a second cake; frost top and sides. Repeat with remaining cakes and frosting.
