Molten-Middle Truffle Cookies
1-1/2 pkg. (12 squares) Semi-Sweet Baking Chocolate
1/4 cup (1/2 stick) butter
1 can (14 oz.) sweetened condensed milk
1 tsp. vanilla
2 cups flour
1/2 cup finely chopped Walnuts
24 Caramels, cut in half
1/4 cup sugar
Preheat oven to 350°F. Microwave semi-sweet chocolate and butter in large microwaveable bowl on HIGH 2 min. or until butter is melted, stirring after 30 sec. Stir until chocolate is completely melted. Blend in milk and vanilla. Add flour and walnuts; mix well. (Dough will be stiff.)
Shape 1 level tablespoonful of dough around each caramel half, enclosing caramel completely. Roll in sugar. Place, 1 inch apart, on ungreased baking sheets.
BAKE 6 to 8 min. or cookies are until soft and shiny. Let stand 5 min. on baking sheet. Transfer to wire racks. Cool completely. (Cookies will firm up as they cool.)

We just tried a new cookie recipe. Basically, you make a double batch of peanutbutter cookies, then stick them together with this filling:
1/2 cup peanutbutter
3 cups powdered sugar
4 tablespoons milk
If it is too thin, add a little more peanut butter and let it sit. It should be about like frosting.
Delicious! But some people have nut allergies. :(

I am partial to the simple chocolate chip cookie. But the food network website has tons of good easy recipies. One of my favorite is to get a mint cookie and sugar cookie dough and cut two pieces of sugar cookie dough and encase the mint cookie and cook for 8-10 minutes at 350!

Its my opinion that any cookie dipped in chocolate is a huge hit. My faves are macaroon and peanut butter. You could even use the refrigerated peanut butter ones. Macaroon recipe is on the coconut bag and super easy. Melt some chocolate chips in the micro and dip half of the cookie and let dry, yum. Also, chocolate dipped pretzels are loved by all!!!! use white or regular chips, micro for 30 sec, stir and dip. Always, always quick to go. Use sticks or twists!

Peanut Butter Blossoms are a fabulous cookie.
They are basically peanut butter cookies rolled in sugar. After you bake them you plop a hershey kiss on top.

Gingersnaps
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 cups flour
1 tablespoon ginger
2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon salt
1 cup margarine
1 cup sugar
1 egg
1 cup molasses
cream sugar and margarine together; add egg & molasses
sift together dry ingredients and add to creamed mixture
roll into balls, dip the balls in some white sugar and put on pans
bake @ 350 for 15 min
