I'm making Shortbread Cookes (butter, sugar, flour and vanilla) and I made more dough than time I have to cook.. so I was wondering if I could freeze the rest of the dough so that I can cook the rest of them later.. or atleast put it in the fridge. I don't know if you can do it with Shortbread Cookie dough or not.

I don't know why not! I always make my cookies, form the cookie dough on a parchment lined cookie sheet, put them in the freezer, when frozen take them out and put them in a freeze lock bag, put them in the freezer. When ever I want fresh baked cookies, I go into the freezer, take out how many I want, and bake them. I might have as many as three different cookies in the freezer ready to be baked. Sooo easy, plus you can do the work when you have the time!!

Refrigerate it. It will change the texture a small amount for scooping, but not after cooking. Freezing changes shortbread taste.

Yes, but only one time. Once it has thawed you must use it then.
