As many as he can grab using his prehensile tail and opposable thumbs. Actually, monkeys eat many other foods besides bananas, including flowers, fruits, nuts, leaves, seeds, insects, birds’ eggs, spiders, and small mammals.
When monkeys were first discovered by man they were observed in a habitat that was rich in bananas, which that particular species took as it's favourite and most abundant food supply. Bananas are rich in vitamins and potassium and so they provide a good dietary base. When the explorers that discovered the monkeys took back pictures of the new creatures, they depicted them eating bananas - a vision which has lasted until today. Despite the fact that monkeys do enjoy a wide variety of foodstuffs, bananas are definitely one of the favourite among many species - keepers at the monkey house in many zoos remark that bananas are the first choice of food from the feed bucket, being consumed before any other fruit.

i would think that the most bananas a monkey could have at once is 5. (one in each hand, one in each foot, and on in its tail).
however, if the bananas are in clusters then he can have alot more. because he can hold 5 clusters. and if each cluster holds about (lets say...) 7 bananas, then thats already 35 bananas that the monkey has!!!

Which genus of monkey do you mean? There are several species and each species has a specific amount of bananas. So please be more specific when asking such a deep question next time.
