This is a very easy and great-tasting "sugar cookie" recipe that works up quick and the dough is nice to work with. I made some over the weekend and got many compliments. I used Christmas tree cookie cutters and garnished with melted chocolate chips placed in a zip-lock bag and clipped a small hole in the corner after melting. I just drizzled this over the trees like garland on a tree. Leave them out on wax paper overnight so the chocolate will set. Hope you enjoy them! Roll-Out Cookies Makes: About 2 dozen cookies Prep Time: 10 minutes Cook Time: 6-7 minutes Ready In: 16-17 minutes Ingredients * 1 cup unsalted butter, softened * 1-1/2 cups granulated sugar * 1 egg * 1-1/2 tsp. vanilla extract * 1/2 tsp. almond extract * 2-3/4 cups all-purpose flour * 2 tsp. baking powder * 1 tsp. salt Directions: Preheat oven to 400 degrees. In a mixer bowl, cream butter with sugar until light and fluffy. Beat in egg and extracts. Mix flour, baking powder and salt; add to butter mixture 1 cup at a time, mixing after each addition. Knead in a small amount of icing color, if desired, for tinted dough. Do not chill dough. Divide dough into 2 balls. On a floured surface, roll each ball into a circle approximately 12 inches in diameter and 1/8 inch thick. Dip cookie cutter in flour before each use. Bake cookies on ungreased cookie sheet 6-7 minutes or until cookies are lightly browned.

These are THE BEST CHOCOLATE CHIP COOKIES EVER!! And that's not just my own opinion, but EVERYONE who has eaten them says the same. I send them to my daughter, and everyone at work gets excited! =)

INGREDIENTS
2/3 cup butter flavored shortening
2/3 cup butter, softened
1 cup white sugar
1 cup packed light brown sugar
2 eggs
1 tablespoon vanilla extract
3 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped pecans (optional)
2 cups semisweet chocolate chips
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
In a large bowl, cream together the shortening, butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture. Stir in the pecans and chocolate chips. Use a small scoop or a spoon to place rounded cookie dough onto ungreased baking sheets.
Bake 10 to 12 minutes in the preheated oven until they are very lightly browned. Don't overbake. Cool 2 to 3 minutes before removing from baking sheets.

Some little "tricks" to get these PERFECT: Before measuring your flour, sift if so it's nice and fluffy, then carefully scoop it into the measuring cup. Be sure to measure all of the ingredients accurately. You can cream the wet ingredients as much as you want, in fact you should mix them very thoroughly, but once you add the dry ingredients to the wet ingredients, only mix until it's all blended. Don't handle it too much at that point or the cookie will turn out tough. And, when you bake them, take them out of the oven when the cookies are just a golden color. They will not look done, but take them out and let them sit on the cookie sheet to cool for a few minutes before gently taking them off to set them in a place to completely cool. Do not package them until they are completely cooled.

Follow these directions totally taking care to be very accurate and you will have absolutely scrumptious cookies! You will have a great chance of winning hands down!

As far as presentation, I think the best looking chocolate chip cookies are on a nice, but plain, white plate.....maybe with a pretty edge, stacked slightly........maybe 8-10 cookies on the plate.

Good luck! :)

Mix up a batch of peanut butter cookie dough (Duncan Hines mix is the best). Roll into balls and roll the balls in a bowl of sugar to coat. Bake as instructed. While they are baking, remove the foil from several Hershey's kisses. The very minute you have taken the cookies out of the oven, place a Hershey's kiss in the middle of each freshly warm cookie.

These are absolutely delicious and look really cool, so that takes care of taste and presentation.

Here's my recipe for Ginger Cookies. It's better if you make them small. I am begged to make these whenever I cater desserts for a friend's party.

2 ¼ c. Flour
¾ c. Butter
2 tsp. Ground ginger
1 c. Sugar
1 tsp. Baking soda
1 Egg
¾ tsp. Cinnamon
¼ c. Molasses
½ tsp. Ground cloves
2-4 tbsp. Sugar
¼ tsp. Salt

Preheat oven to 350 degrees. Combine dry ingredients (excluding sugar). Beat butter and 1 cup sugar until fluffy, and then add egg and molasses. Beat well, then stir dry ingredients into beaten mixture. Shape into 1 inch to 1 ½ inch balls then roll in remaining sugar and place on an ungreased cookie sheet about 2 ½ inches apart. Bake about 8-10 minutes or until light brown and still puffed. Let stand 2 minutes before putting on a wire rack to cool.

Make standard chocolate chip cookies but take one of those large candy bars like a symphony. I mean the big 8 ounce or more bars put it into a blender and add it to the dough along with the chips.
