Definitely the Nestle Tollhouse recipe. I make them for my friends and family every year and you wouldn't believe the compliments I get! I always switch out the butter for Crisco Butter Flavored sticks, omit the nuts, and under cook them by about 2 minutes. (I usually do about 8 minutes -- they won't seem done when you take them out -- but once they cool they are wonderful!) Let them finish cooking on the pan for a minute or two then move them to cooling racks.

I've also found real vanilla extract is much better than imitation and the fresher the baking soda the nicer they turn out.

Happy Baking!

Beat in the egg and the vanilla extract for another 30 seconds. 3. In a mixing bowl, sift together the dry ingredients and beat into the butter mixture at low speed for about 15 seconds. Stir in the espresso coffee powder and chocolate chips. 4. Using a 1 ounce scoop or a 2 tablespoon measure, drop cookie dough onto a greased cookie sheet about 3 inches apart. Gently press down on the dough with the back of a spoon to spread out into a 2 inch circle. Bake for about 20 minutes or until nicely browned around the edges. Bake a little longer for a crispier cookie. Yield: 2 dozen cookies

Nestle Toll House cookies are my favorite also (easy cleanup, too!), but here's another recipe for you...

"Chunky Chocolate Chip Peanut Butter Cookies" - 3 dozen

1 1/4 cups all-purpose flour
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp. salt
3/4 cup (1 1/2 sticks) butter or margarine; softened
1/2 cup packed brown sugar
1/2 cup granulated sugar
1/2 cup creamy peanut butter
1 egg
1 tsp. vanilla extract
2 cups (12 oz. pkg.) Nestle Toll House Semi-Sweet Chocolate Morsels
1/2 cup coarsely chopped peanuts

Combine flour, baking soda, cinnamon and salt in small bowl. Beat butter, brown sugar, granulated sugar and peanut butter in large mixing bowl until creamy. Beat in egg and vanilla; gradually beat in flour mixture. Stir in morsels and peanuts.
Drop dough by rounded tablespoon onto ungreased baking sheets. Press down slightly to flatten into 2" circles. Bake in preheated 375* oven for 7-10 minutes or until edges are set but centers are still soft. Let stand 4 minutes; remove to wire racks to cool completely.
