Growing up, my mom used to make what she called "Poor Man's Sloppy Joes" Now I make it for my family and they like it better than the canned stuff you use to make it.
Brown your ground beef, add onions and whatever seasonings you like. Drain well. Add enough ketchup to make a good sauce, a small squirt of mustard (too much is overpowering) and a little brown sugar. Keep tasting it and adding more of what you think it needs. Sometimes to change it a little, I add a drained can of Ro-tel tomatoes.

How about some "Hardeman Helper". That's our twist on Hamburger Helper. Cook your hamburger and in a seperate pot boil 2-3 cups of elbow macaroni. Drain off grease from meat, and drain H2O from pasta. Combine in pasta pot. Add 7-8 slices of provolone cheese, 1 jar of Alfredo sauce and a little milk to combine everything. We will sometimes add 2 Tbs of margarine to keep pasta from sticking. Warm up till cheese melts and voila, a meal that will satisfy everyone and you will have plenty of leftovers.
My husband and I came up with this idea one night when we couldn't decide what to do with 2 lbs of hamburger.

My husband despises meatloaf but loves my recipe.
Buy some Caribean Jerk marinade and some blue cheese crumbles.
With your hands mix about 1/2 - 3/4 cup of the marinade directly into the meat. Chop up some onions and whip an egg and mix that in as well. Put 1/2 of the mixture into your loaf pan and place the cheese along the top. Take the rest of the meat and moosh it onto the top to create a "cheese sandwich" and bake following normal meatloaf instructions. (Can't remember exactly as I'm at work).

I'd go with a hearty dorito casserole:
The beef, mix with some ranch style beans and 1/2 can of cream of mushroom soup.
Layer the doritos in a casserole dish and add shredded cheddar cheese to the top of each level( 3 or 4) like a lasagna

Shepherds Pie
A real meat and potatos dish the whole family will Love.
6 servings 1¼ hours 30 min prep
1 lb ground beef
3 cups prepared mashed potatoes
3 cups frozen mixed vegetables
1/2 lb sliced fresh mushrooms
1 cup grated monterey jack pepper cheese
1/2 cup crumbled sharp cheddar cheese
2 tablespoons butter
1 (12 ounce) jar heinz beef gravy or mushroom gravy
1 medium onion, diced
2 fresh garlic cloves
Brown ground beef with the diced onion, drain,and cover the bottom of a 2.75 quart caserole.
Sautee mushrooms with pressed garlic and 1 tablespoons butter.
Combine mushrooms,vegitables,and gravy and heat to a boil, stiring constantly. Pour gravy mixture over ground beef and spread evenly.
Spread 1/2 cup pepper jack cheece over gravy mixture and cover with the mashed potatos."Hopefully fresh, not instant".
Sprinlke the last of the pepper jack cheese over the potatos then the crumbled cheddar.
Dot the top with the rest of the butter and sprinkle with salt and pepper.
Bake at 350 for about 45 minutes.

Here's what i do when I'm sick of Burgers and Meatloaf
Brown the Hamburger and some onions if you like onions if not leave them out... if you like mushrooms then use a can of sliced mushrooms with the juice and all and then add 2 cups of water and 2 packages of your favorite gravy ......season to taste and serve over Noodles or Mash potatoes or Rice.... Tastes yummy

Hamburger steak: make hamburger patties, cook them, put one on a plate, top with cooked french fries (the frozen kind will work), add green or red chile and cheese. Serve with Texas Toast. Yummy!

You've probably already eaten, but here you go anyway...
"Ground Beef Vegetable Soup" - 8 servings
3/4 lb. ground beef
2 (14 1/2 oz.) cans beef broth
2 cups water
1 (28 oz.) can diced tomatoes; undrained
3 ribs celery; chopped
2 large carrots; sliced
2 medium onions; sliced
1 medium potato; peeled and cubed
1 1/2 cups fresh cauliflowerets
2 tbsp. minced fresh tarragon or 2 tsp. dried tarragon
1 tbsp. garlic powder
1 tbsp. minced fresh parsley
1/2 tsp. salt
1/8 tsp. pepper
3/4 cup uncooked macaroni
In Dutch oven or large pot over medium heat, cook beef until no longer pink; drain. Add broth, water and remaining ingredients (except macaroni); bring to a boil. Reduce heat; cover and simmer 30 minutes or until vegetables are tender, stirring occasionally.
Cook macaroni according to package directions; drain. Stir into soup; heat through.
