Stilton -- one of cheese-making's greatest gifts to the world!

I love a good sharp Cheddar, too, the sharper the better. And I love Crandale, which is IIchester with cranberries. It's got a nice zingy "bite" to it. In fact, I'm not sure I've ever met a cheese that I didn't like, up to and including Limburger!

And since all these great replies have now made me hungry, it's off to the refrigerator for a chunk of Crandale!

It depends what you are going to eat the cheese with.

Generally I prefer camembert or brie. However cheddar (any kind) Wensleydale, Mozzerella are all good too.

When I go shopping I try to get the small selection of continental cheeses then
1) i don't get bored
2) i always have something different
3) I get to try new cheeses all the time.

OH and they are just the right size for crackers or cheese biscuits ;)

Danish blue cheese.. I know it stinks but it's great tasting. A few brands are tad too salty.
Most are great though. Ever try Danish Cheese
melted on Popcorn? That's ta die for! U know what I mean? 2nd is Mozzarella Cheese, My 3rd favourite cheese is Jalepeno cheese or Habenaro Cheese!

You should try St. Andres triple creme Brie. Make sure you serve it at room temp. It is like butter. I have had it in CA. but when I went back East, I couldn't find it, but that may be because I really didn't know where to shop.

The stuff my auntie makes down in Devon with the milk from her Jersey hear - it's SO good!

It's cheddar - and the last five years she's been putting stuff in some batches, chives, garlic, black pepper - this year cranberries, it's amazing and SO yummy....got myself a huge wedge!

mozzorella...its great on pizza or on pasta dishes...even in salads really mild but very versatile. Also I quite like a good old strong cheddar cheese...cheese ploughmans sannies with good strong cheddar, branstons pickle, salad and some picled onions...yum!

Real Cheshire cheese (not the stuff bought in super markets but the real McCoy bought from the, only one or two farm producers left in Cheshire).
