6 yr olds love nature (I have a 6 yr old). Why not make up a little gift basket with outdoorsy stuff. Binoculars ($10 at Walmart), magnifying glass, a subscription to Discovery Kids magazine. Maybe some stuff to play in the snow (if he is in an area with snow). Maybe snow boots, new gloves, they also have molds to make shapes in the snow, or a sled.

Building block are great. Legos, Mega-Blocks, etc... This promote creativity and allow for the imagination to "spread it's wings." Just don't get caught up in the themed sets. Stick to the basic blocks to keep costs low.

I bought mine a pair of ufo-shooters (they shoot little sponge disks) from the discount. (approx. 10$)
He took one, I took one, and the day was wonderful!
really, they make such fun, you can't stop ...
if he's the more creative tipe: some lego, books with many big pics in them and things to do (well, like dinosaurs, but take care, they shouldn't be too hard to read), and loveliest of all: finger paint. makes a LOT of clean up work - still very great.
Also super: mini cars and trucks, some disney dvds, plasteline, a music instrument.

My son is six and he loves books. Since at this age he is starting to learn to read you can give him a few books with a cute handmade coupon that says "mommy and me book time, you have 30 minutes with just mom and you to read together."
Also my son loves cars..simple cars make him happy. This Christmas I got him a personal cd player (15 bucks) and I went to barnes and nobles and got him like 5 cd's on clearance with just kids songs and books on cd's for 10 bucks!
Enjoy and be creative! At this age they are pretty easy to please!
