why do wines, when they sit for a while, get sour and not drinkable. Am I not drinking it fast enough, letting it sit too long, or is it just a bad bottle. I have had to thorw away a few and these wines are not cheap, either.

There are inexpensive gadgets you can buy that will vaccum the air out of the bottle before putting it away. Air will cause your wine to go bad if not consumed in 2-3 days.

You are not consuming these fast enough! I recommend getting a cheaper sauvignon blanc or chardonnay. Be sure you chill them before serving. You can also store them in the fridge... a good tip is to buy a set of wine stoppers you can re-use on opened bottles to keep the wine fresh for a longer period of time. Do not keep an open bottle of wine longer than 3 or 4 days. If you like reds, and it will just be you drinking it - definitely buy a cheaper wine and invest in those stoppers!

It just depends upon the wine. Some need to age after being bottled, and get better over time, decades later, even. Some are meant to be drunk within a few months of bottling.

Ask a wine pro. Tell them you need something that can sit a few months (years?) before you drink it.... otherwise, cut back on your purchases, and buy just what you need for an upcoming event.

try this, Semillon Blank, (Big seed's), white wine, 40% pear, and 60% Grapes, from Concha y Toro, another "Carta Vieja", (Old card), also from Chile, cost $10, $15, another very soft and sweet, and fruity, for ladies "Gato Blanco" a/o "Gato *****" also from Chile, cost $8, to educate your taste, a/o to accustom your self to don't believed that in wine expensive is better, that is a lie, Chile has good wine, always between the first too third in the World of good wines and production, the slogan is "With Chilean wine you can't go wrong"., Just go to the store and try, there will be many names, truss me try between $!0 and 12, to begin with and if you like it, what is there to lose, at lease you will be saving some bucks, instead of wasting. or go to www.Chile .com/ and see for your self, you can also get then in E-Bay. enjoy. To some peoples taste, the wine gets better, a/o taste best, (more strong taste), went is open as well than few minutes after, especially, winos, and or experts?, I use too know someone a good friend, that will leave a glass of wine in his night table which he will drink in one shoot, the next Morning, specially the House wines that we will have the chance to taste while we were in a winery, as we were playing in a rock band in different locations,. Oxidation.

Drink them soon after opening.

You may also try investing in a nitrogen capping system. It allows you to reseal the wine and it displaces the O2 with nitrogen, limit the amount of oxidation.
