Well with Manicotti go with a white wine. The ethinicity of the meal is irrelevant. When your meal consists of pasta's, rices, fish, cheese and/or veggies White Wine, Red Meat- Red Wine, Blush you can use for either but I generally like to use it for the same purposes as white wine.

Head to your liquor store and ask for a bottle of white sangiovese, or bartolini, or basically any dry white wine would be nice with manicotti. A light red would alright as well something like a pinot noir. I know that it's french but it doesn't have to be Italian.

Red Wine is always best with any Italian meal that is not Seafood.
Personal preference from there on out, my Italian family would offer a Merlo and a Burgandy.

Pinot Noir. It can stand up to the bold flavors of Italian food. Especially if you are using a tomato based sauce.
One of my favorites and totally affordable is Cavit's Pinot Noir.
Not too dry and quite smooth.

Chianti is a classic but it's pretty dry. If you don't like that, try a Shiraz or a blended red (liek a Cab Merlot).
