Chicken! One of the dishes we do the most is super great because heaven knows after a day of work you do NOT want to be spending a lot of time in the kitchen. I use a casserole dish, just lay out enough chicken on the bottom for however much you want to make (I ususally make enough for a dinner enough the next night too) and then sprinkle the chicken with some steak seasoning (Trust me, I'm not crazy, this will be really good), and a little salt, and some brown sugar, and then put worchestchire sauce over the chicken. Then just wash up some red potatoes (those little ones) and cube them, then put salt, pepper, and oil into a bowl and toss the potatoes to coat them, and then sprinkle them in the pan around the chicken. Bake the whole thing in a 375 oven for like 25 minutes or until the potatoes are soft when you poke them with a fork. The chicken can stand to be in there and won't dry out because the moisture from the potatoes stays in the pan. This makes the best juicy chicken, and it is so easy because you just throw it all in a pan and put it in the oven and go read a book or something!!!

Some sort of chicken dish...maybe souper chicken.
Souper Baked Chicken
Serves: 4
Ingredients:
2 lb. chicken parts
1 tbsp. margarine OR butter, melted
1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup
Directions:
Place chicken in 2-quart shallow baking dish. Drizzle with margarine. Bake at 375°F. for 30 minutes.
Spoon soup over chicken and bake 30 minutes more or until chicken is no longer pink. Remove chicken. Stir sauce.
TIP: If desired, remove skin from chicken before baking. In step 2 mix 2 tablespoons water with soup.
Great served with white or brown rice.
Easy inexpensive recipe that the whole family will love.

Im a family of 3 (unless my moms staying with me) and I spend over 100$ a week. What you should do is, if you have a Sams or Costco around you buy in bulk there things you need: veggies, pastas, cereals ect. Even though it may seem expensive, in the long run its cheaper. You can get a 6 pack of angel hair pasta pretty cheap. That will last ALOT of meals. For veggies and fresh fruits get fliers and shop where they are cheapest. Sprouts has really good deals on fruits and veggies, and because they go bad so fast you dont have to worry about wasting alot of money. Also, depending on what advantage card you get (from sams, not sure about costco) they offer deals on foods. A few weeks ago Ipicked up a double container of turgey meat (two containers of over 2lbs each) on "sale" I ended up paying $8 for it. I was really impressed. 1 package makes cheese burgers (2-3 nights in a row sometimes) and meat loaf, meat alls, ect. I shop around. Its pretty much the only thing I do out of the home. I now know the price of the things I need/what from stores closest to me, and know the places I like best. By shopping at sams i stocked up, so dont need certain things fora while and can concentrate on things i cant stock up on.

Since you probably bought a lot of minced beef already or are going to, if you buy some puff pastry, you can brown the meat in a saucepan with tomatoes, chopped boiled eggs, any vegetables you like, all-spice, salt, pepper and a little bit of ketchup (sounds weird but it's nice) and then make little pies by cutting the pastry into squares and folding it over 2 tablespoons of meat or so. Make sure you brush the pastry with egg before you put it in the oven and it's ready when it's golden brown.

Beef Stroganoff:
1lb sirloin steak
1 Lg bag of egg noodles
1 can cream of mushroom soup
1 16oz container sour cream
2 beef boullion cubes
Have steak cut into 1 inch cubes at grocery store (save yourself some time)
Melt about 3 tbs. butter in pan. Add minced onions (if want)
Add 1 cp. water w/ beef boul.cubes, dissolve completely
Brown your steak in this.
While meat is cooking, put noodles on.
When steak has browned, add soup and sour cream. Heat thru.
Drain pasta and pour sauce over it. Mix well. Add salt and pepper to taste.
Hope this helps and hope you like it. If you have your meat sliced at the grocery, this is a really quick and easy meal that most everyone likes. :)

Coca-Cola Porkchops (Super easy!)
Porkchops, 1/2 cup ketchup, 1/2 cup Cola, brown sugar.
1.Wash off porkchops (any kind is fine, but I use boneless)
2.Cover baking sheet (with sides) with aluminun foil (makes for easy cleanup).
3. Place pokchops on foiled baking sheetand put a little bit of salt and pepper on them.
4. Mix up the ketchup & Cola together til it's well blended.
5. Pour over porkchops and cover each porkchop liberally with the brown sugar.
Bake at 375* for 40 minutes.
The chops will be delicious and have this yummy saucy glaze on them.
I servce them with Rice a Roni, green beans or corn, and crescent rolls. My husband loves this meal!
Enjoy!

How about chicken cacciatora? It's scrumptious and seems like a fish or chicken or vegetarian dish would round out your menu nicely.

I guess you are buying enough hamburger meat for chili (1 lb), enchiladas (1/2 - 1 lb.) and hamburgers (probably 1 lb.) around 4 lbs total. Fry out enough of the beef..seasoned with onion, garlic and salt and pepper. Divide it up for your meals...save one pound of the seasoned meat to make:
spaghetti sauce
hamburger patties...cooked in brown gravy and served over rice, meatloaf
creamed gravy, to serve over toast, biscuits, or egg noodles etc.
With your ham and cheese you could make:
Omelets
Ham, cheese and potato casserole
Mac n cheese with ham
Cream soup with cheese and ham...this is so good, I like to add broccoli or asparagus to it!
Make a stir fry with rice, onion, green-pepper, and ham (scramble and egg and pour over for an oriental rice) . Eat as is or roll up in a tortilla.
Use your imagination.....you have the making for a lot of meals.
