White chocolate is a type of chocolate based on cocoa butter without the cocoa solids. It also includes milk solids, sugar, lecithin, and flavorings (usually including vanilla). Cocoa butter is the ingredient used in other chocolates so that they remain solid at room temperature yet melt easily in the mouth. Thus, white chocolate has a texture like that of chocolate but does not have the same taste. Unlike chocolate it does not contain caffeine.

Because white chocolate has no cocoa solids from the chocolate liquor, the FDA doesn't classify it as chocolate. However, the organization is working with chocolate manufacturers to establish a standard definition for white chocolate. Until a standard is published, check labels and beware of "white chocolate" that contains vegetable fat instead of cocoa butter. The quality and taste are inferior.

It is made with cocoa butter, but NOT the cocoa solids that make dark chocolate. Also sugar, milk solids, lecithin and vanilla to make it taste good!
