If the cheese is high-moisture, such as fresh mozzerlla or cream cheese (and there are others), then the mold will be all in the cheese, even if it's just on the edge--so you can't just cut the mold off. You have to throw out the cheese. But hard cheeses, such as a block of cheddar, are perfectly fine if you just cut the mold off.

It relies upon what style of mildew you propose. Blue cheese is extremely sturdy, and that form of mildew isn't risky. confident, that's a fungus yet think of of it this way, mushrooms are 'fungi' too! in spite of the incontrovertible fact that if a bite of cheese that may no longer a blue cheese has mildew on it, I additionally throw it out. My mom consistently says you could decrease it off and it won't impression the flavour of the the remainder of the cheese, and that i'm frequently no longer a germaphobe, yet i'm choosy while it comprises dairy products. i assume all of us have our own sensitivities!
