Mature cheese has been matured for longer and during the maturing process develops a much richer and rounded flavour.
A good "young" ie normal cheese will have a nice flavour but will not give you that mouth itch that a mature cheese will!
A poor young cheese will taste of little more than plastic - it just isnt worth bothering with!

The taste of mature cheddar is more developed and richer than young cheddar. Mature cheeses are good to cook with and you don't need much to cook with. Mild cheddar is better eaten cold I think - great for sandwiches and with crackers. Do try both - you might like one and not the other

Mature has er... been matured longer so it's stronger tasting, normal cheddar's just your run of the mill medium or mild tasting cheese.

mature cheddar has a stronger taste,a good one will make ure gums ache,it is also "grainy" in texture,drier and crumblier,young cheddar is mild tasting,smoother ,creamier and cheaper,both have their own place in the kitchen
