VODKA JELLY

Vodka Jelly is not hard to make, it's just a case of getting your quantities right! If you don't, it just won't set.

Any jelly mix will do fine, strawberry and raspberry are obvious favourites. Any brand of Vodka will also do just fine.Half eaten Vodka Jelly!

Basically you mix the jelly as you would normally, only using 80% of the recommended liquid. Substitute 40% of the liquid for vodka, and the remaining 40% hot water, and mix until all jelly has melted away. Pour into ice cube containers, shot glasses, or a bowl will suffice and allow to set in the fridge. It depends on your fridge, but a few hours should be fine - but make well in advance.

Next is the fun part....drinking it. Well it's not so much drinking it as letting it slide down your throat. Don't worry you won't taste the vodka in it, the jelly is nice though. Don't eat too much, remember how much vodka is in it

CHAMPAGNE AND GOLD-LEAF JELLY - This one is lovely

It is best to make this the day before it’s required.

Serves 4

1 lemon
115g granulated sugar
5 sheets leaf gelatine
450ml good champagne
4 leaves (8cmx8cm) loose gold leaf

Finely pare the zest from the lemon and place this in a saucepan with 250ml water and the sugar. Over a low heat, dissolve the sugar, then simmer for 5 minutes.

Soak the gelatine in cold water for 5 minutes, drain, then strain the hot sugar syrup over it. Stir until the gelatine has dissolved. Next, squeeze the juice from the lemon and strain through a fine sieve into the syrup. Transfer to a jug.

Pour half the champagne into a food processor or liquidiser, add the gold leaf and briefly whizz until it has broken into pieces. Pour into the jelly mixture, making sure you get every last little bit of the gold. Rinse out the liquidiser with the remaining champagne and mix into the liquid jelly.

Chill the mixture for about 2 hours, but keep an eye on it, stirring each time you check, to ensure the gold leaf is suspended in the jelly. As soon as it begins to set, stir once again and pour into 4 flutes or pretty glasses. Chill for a further 5 hours or until firm enough to serve.

LIME AND CHILLI VODKA JELLY WITH BANANAS

This is definitely an adults-only jelly. The peppercorns and chillies give it a delicate, appetising prickle. It is best made the day before it is needed.

Serves 6

350g granulated sugar
3 dried (mild) Italian or Kashmiri chillies
5 black peppercorns
6 limes
100ml vodka
7 sheets leaf gelatine
2 small bananas

Place the sugar, chillies, peppercorns and 350ml water in a saucepan. Dissolve the sugar over a low heat and simmer gently for 10 minutes. Leave to cool, so that the spices can infuse the sugar syrup.

Juice the limes and strain through a fine sieve into a measuring jug. You will need 175ml-200ml lime juice. Add the vodka.

Soak the gelatine in cold water for 5 minutes, drain, then pour on 50ml boiling water and stir until the gelatine has dissolved. Strain the sugar syrup into the gelatine, then combine with the lime-vodka mixture.

Pour a little of the liquid jelly into 6 pretty glass dishes or wine glasses, so that they are each one-third full. Leave the remaining jelly at room temperature. Slice the bananas directly into the dishes or glasses, dividing evenly between each. Chill the glasses in the fridge for about 3 or 4 hours, or until the bananas are just set in the jelly. Top up the glasses with the remaining liquid jelly and return to the fridge for 2-3 hours more, or until set.
