unripe bananas are mainly a carbohydrate, whereas ripe bananas are mainly sugar. For energy its best to eat slightly unripe bananas to get more carbohydrates than sugar.

I expect because they have more minerals and vitamins in them and they are easier to digest. I am not sure, I cannot eat them as I am allergic. My mother eats one every day and she says this. I have to get out of the room if she is eating it.

i think some of the vitamins deteriorate as the fruit ripens
