This is a pretty easy recipe. You can bake in the oven at 350 degrees instead of frying as the directions say. Bake for 40-45 minutes. Cut into a piece of chicken to make sure there is no pink inside or use a meat thermometer.
1 Cup pancake mix
2-3 teaspoon salt
¼ teaspoon pepper
¼ teaspoon paprika
chicken pieces, cut up
oil for deep fat frying
In plastic bag combine pancake mix, salt, pepper and paprika. Add chicken shaking to coat. Heat oil to 375 degrees. Fry chicken until juices run clear.

Hope this helps

Just leave out the ingredients and directions for the mushroom sauce, if you don't want it...

"Oven-Fried Chicken with Mushroom Sauce" - 4 to 6 servings

1/2 cup all-purpose flour
1/2 tsp. salt
1/8 tsp. pepper
1 (3 to 3 1/2 lb.) broiler-fryer, cut up
2 tbsp. butter or margarine
1/2 cup sliced mushrooms or 1 (4 oz.) can sliced mushrooms; drained
1/2 cup chicken broth
2 tbsp. lemon juice
1 tbsp. Worcestershire sauce

1) In paper bag, combine flour, salt and pepper. Add chicken a few pieces at a time. Close bag and shake to coat chicken. Repeat with remaining chicken pieces.
2) In 13x9" baking dish, arrange chicken skin side up; dot with butter. Bake at 350* - 45 minutes.
3) Combine remaining ingredients; pour over chicken. Bake 30 minutes more or until chicken is fork-tender, basting occasionally.

ok.... I dont believe anyone is unable to cook... they usually dont have the right tools. I'll give you a recipe from a kids cookbook.... if my 4 year old can make this so can you.

Crispy Chip Chicken- Kids In The Kitchen, by the Pampered Chef
Everybody wants to know the secret to your crispy oven-baked chicken. Do you dare tell them?

4 ½ cups chili cheese or bbq flavor corn chips
1 egg
1 Tbsp milk
1 broiler-fryer chicken cut up (3 – 3 ½ lbs)
2 Tbsp butter or margarine

1.Preheat oven to 375ºF. Place chips in a large resealable plastic bag. Using Baker’s Roller, crush chips tp make 2 cups of coarse crumbs. Pour onto large plate and set aside.
2.In Classic Batter Bowl, mix egg and milk using Stainless Whisk.
3.Rinse chicken pieces under cold running water and pat dry with paper towels. Trim off extra skin or fat using Kitchen Shears. Dip chicken into egg mixture, one piece at a time, then roll in crumbs to coat evenly. (Press crumbs against the chicken so they will stick). Place chicken, meat side up, in Rectangular Baker (9 x 13). Sprinkle chicken with any remaining crumbs. (Discard egg mixture).
4.Place butter in small Micro-Cooker. Microwave on HIGH for 30 seconds or until melted. Slowly pour over chicken.
5.Adult help: Bake 1 hour or until chicken is no longer pink in center. Using Silicone Mitts, remove Baker to Stackable Cooling Rack.

Cook’s Tips
•You can use regular flavor corn chips instead of the chili cheese flavor chips. Just add 2 tsp chili powder to the crumbs.
•It’s important to practice food safety rules when cooking with chicken. Always wash your hands, cutting board, tools and work surface with hot, soapy water immediately after handling raw chicken to prevent spreading bacteria to other foods.

* 1 (4 pound) chicken, cut into pieces
* salt and pepper to taste
* 1 1/2 cups all-purpose flour for coating
* 2 quarts vegetable oil for frying

DIRECTIONS

1. In a large skillet, heat oil over medium heat. Salt and pepper chicken pieces to taste, then roll in flour to coat. Place chicken pieces in skillet and fry on medium heat until one side is golden brown, then turn and brown other side until chicken is no longer pink inside and its juices run clear. Drain on paper towel and serve!

Although I don't eat many fried foods, this one looks good enough to eat!

take the chicken pieces, dust with flour (which has salt + pepper in it), then dip in beaten egg, then roll in breadcrumbs (which have some cajun spice mixed in).

That's it! If the chicken pieces have skin on, then no need to add oil, otherwise drizzle some olive oil over the top and slam them in the oven.

if its in the oven, its baked, not fried.

I'd go with shake and bake if I was you.

its basicly bread crums and seasoning.

put the chicken peices in a ziplock with it, and shake so its evenly coated,
and bake

go with peices about the same size so they cook the same.

when you go to check them remember,
you can always cook it longer, but you cant uncook it.

err on the side of too soon when checking,
but do make sure its fully cooked....

( no red in the juices.)
