If you want to volunteer, peace corp does a lot of good things. Though they require that you have a degree. Amnesty lets you do some work on a number of levels, even something as simple as helping to write letters. Mercy Corp does work all over the world, though you're probably going to have to start by getting people to sign petitions till you can climb up within the organization.

Non-profits do get a lot of applications for jobs and whatnot. They have to pick and choose, because it's slightly counter-intuitive, but low-paying or volunteer jobs are in high demand. It's really not efficient for them to just hire everyone.
regarding heretic #8's comment... getting into Peace Corpse is like getting into an ivy league school. seriously.
