Has anyone heard of this and why does she do so?

Yes it's an ancient Pagan practice to ward off evil spirits,and/ or negativity or cleanse a space of bad vibrations.
You sure she's Christian?
Other than that, I only know of people tossing spilled salt over their shoulder for good luck/ to avoid bad luck do to the spill, again Pagan Roots.
She may just be like many other Christians who do these things without knowing the origins, and many people would be surprised at how many things/ sayings exist today from Arcane Ancient Pagan Ways.
I would ask her what she's doing, she may have a totally different reason. Peace~

Although demons, being spiritual beings, do not need food, according to Christian demonology, demons and especially the Devil have been believed to hate salt, and thus it was claimed by the Christian church that no food was served with salt during witches' sabbaths. Bread, if not made with rye, and oil, were also said to be prohibited.

Sounds like some mental instability has turned your Christian lady into a salt tosser. Keep an eye on her if she lives alone she might need some help.

Using salt to protect yourself from evil is not a christian practice, but derives from pagan beliefs. Being a wiccan myself, salt is used primarily for purification.

I wonder if she has dementure coming. Salt was thrown traditionally to get rid of the devil (don't think he minded really). It's a shame if she does have dementure or other mental problems.

I've never heard of a Christian doing this before, and I can think of no Biblical basis for it. It sounds superstitious to me. Why don't you just ask her about it?

this is actually a pagan cleansing ritual. salt us used to purify rooms, and to keep evil spirits / demons away. not sure that a devout christian would like being told that they are resorting to paganistic rituals though...... she might think that u are the demon !!!

it banishes evil--an old superstition that goes along with trying not to spill salt and if you do throwing a pinch over your left shoulder

Salt is supposed able to ward off "Satan". That's why you're supposed to throw some salt over your right shoulder when you spill salt - to ward off "Satan". I know it sounds silly, but people actually believe in it.
