Adding sage to any recipe for hash would work, but are you sure you want to do that. It think it would be a very odd taste.

I would slice up potatoes very thin and fry them up. Scramble the eggs and add sage, cheddar cheese and cut up ham. Spread over the potatoes. and serve with toast or English muffin.. You could also use frozen hash browns which is much more convenient...
