Marinade
Juice of a lemon
2 tablespoons olive oil
1 tablespoon tomatoe puree
1 clove garlic, crushed
1 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon tumeric
1/2 teaspoon mild chilli sauce
1 teaspoon ground corriander
pinch salt and black pepper


For the sauce
1 small tub greek yoghurt
handful of freshly chopped corriander


The Veg (amounts depend on number of people eating, numbers below for 2 people)
sliced courgettes
12 button mushrooms (whole)
12 small new potatoes (whole)
12 button onions (whole)
12 cherry tomatoes (prick skins a few time)
2 peppers (capsicums) (any colour), roughly chopped


Other stuff (all optional, make your own choices)
Pitta bread / Small nan breads / Flour tortillas
Some chopped green leaves (Rocket, Basil, any really)
Fresh chives
Directions
1) Mix all the ingredients for the marinade together, mix well.
2) Boil a large pan of water (slightly salted), and then turn down to simmer.
3) Put the small potatoes into the water, and simmmer for 6 minutes.
4) add the rest of the veg (except the tomatoes) and simmer for another 4 minutes.
5) remove the veg from the water and drain. Gently dry the veg on kitchen towel.
6) put all the veg including tomoatoes into a large bowl, pour on the marinade and make sure all veg are coated in the mixture).
7) Leave to marinade for at least 1 hour. This meal d oes not really benifit from long periods of marinading.
8) Finely chop the corriander and mix into yoghurt, cover and refridgerate.
9) Skewer the vegetables (tip: If using wooden skewers, soak them in water for about 30 minutes before using as this stops them burning).
10) Pre-heat a grill, and slowly cook the vegetables under a medium heat, turning regularly. Kebabs take approx 15-20 minutes to cook. I like to add an extra potato or two, as when these are cooked, you can guarantee the rest of the veg will be.

Serve with warm pitta-bread on a bed of green leaves with a good dolop of the sauce on the side. For a nice decoration, throw a few unchpped chives over the top. May I recommend also some nice chilli sauce or salsa if you want more spice.

Veg Kababs

Ingredients

Cooked rice (left over) -1/2 cup
Dal (any leftover) - 1 cup
Capsicum 1- finly chopped
Carrots- 1, Grated
Onions- 2 chopped
Tomatoes - 2 choped.
Cauliflower- Grated 1/2 cup
Ginger/Garlic paste- 1tsp
Coriander leaves- chopped finely.
Chilli powder-1/2 tsp
Garam masala -1/2 tsp
Salt to taste
Red chilli powder-1/2 tsp
Amchoor - 1 tsp
Gram flour - 2 tablespoon
1 bread slice
Oil for frying

Method:


Mix all the ingredints.
Make balls of desired shape & size
Heat oil in a kadai and deep fry the balls till crisp
Can be served with tomato sause or dhaniya chutney

Ingredients:

-Black Grams 100 grams
-Chopped Onions 2
-Ginger-Garlic paste 1 tsp.
-Garam Masala Powder 1/4 tsp.
-Green Chillies 4
-Coriander Leaves
-Vegetable Oil As Required
-Salt to taste

Method:

1. Soak Black grams for 5 to 6 hours.
2. Grind them well.
3. Mix all the other ingrediants to the paste and grind.
4. Add a little water so that kabab balls of medium firmness can be made from the paste.
5. Heat oil in a deep frying pan/ kadhai on high (Oil should be enough so that all the balls dip well in it).
6. Reduce the heat. Deep fry balls till light brown.
7. Serve hot with green chutney.

"Yuletide Brochettes" - 16 servings

2 1/4 lbs. boneless, skinless chicken breasts
1/4 cup chicken broth
1/4 cup Dijon mustard
2 tbsp. olive oil
2 tsp. Worcestershire sauce
1 garlic clove; minced
1/2 tsp. dried thyme
1/4 tsp. salt
1/8 tsp. pepper
4 Italian sausage links
2 medium zucchini
2 medium sweet red peppers
2 medium sweet yellow peppers

Cut chicken into 32 cubes. In a large resealable plastic bag, combine broth, mustard, olive oil, Worcestershire sauce, garlic, thyme, salt and pepper. Add chicken; seal bag and turn to coat. Refrigerate overnight.
In a large skillet, cook sausages over medium heat until juices run clear. Cut each sausage into 8 slices. Cut each zucchini into 16 slices. Cut each pepper into 16 chunks. Drain and discard marinade. On metal or soaked wooden skewers, thread chicken, sausage, zucchini and peppers. Broil 6" from heat for 15-20 minutes or until chicken juices run clear and vegetables are tender, turning occasionally.

Tofu Kebabs

Cut the tofu into small squares and thread onto kebab skewers or cocktail sticks.

Warm through on a griddle pan or barbeque.

Serve with barbeque sauce or peanut satay sauce. Satay sauce is best served warm (it is best to pour it over the tofu and microwave it for 2 minutes on high power)

Take Paneer, Capsicum, Tomatoes, Onion.
Peel the onion and cut all the vegetables and Paneer in 1" sq. size. Take a stick, put one pc. paneer, one pc. capsicum , one pc. tomatoes and one pc. Onion. This way make required no. of sticks, Now heat the oven at 150dg., place the sticks in the grill of the oven, roast for five min. and take out. Put some salt and chat masala/ jaljeera and serve with tomatoe sauce.

this is soo easy , i hope it helps

pick your fave vegies like capsicum, mushrooms,carrot or anything else u like. slice them up and through them onto a kebab stick. hen simply through them on the grill or on the barbeque. U dont have to do this but some people love it, u can add a garnish of olive oil, soya sauce and seasme sead oil, make sure u mix it well so that the different sauces dont seperate.

you need your favorite vegetables such as zucchini, mushrooms, cherry tomatoes, onions, green/red peppers, cube the vegetables and marinate in Italian dressing for couple of hours, add some spices to them if you like, such as garlic powder, salt and pepper, or even barbecue sauce. put them on a sewer and barbecue them. wrap them in pita bread or tortilla bread. Enjoy!
