If you really want a substitute for marjoram that's a bit tough. The essence that marj has is very unique, and if use improperly can ruin a dish, the same way that sage and poultry seasoning can. So with that in mind why don't you try using a bit of sage and sorrel. If you don't have either of those just use some worchestershire sauce or magi if you have it. Magi is a sauce made from a herb called mrytle or mryt...sorry I can't remember the exact spelling. Anyway there is my 2 bits worth. Good luck with the sausages. They sound good

Marjoram is actually a wild form of oregano, and tastes closest to marjoram.

I think oregano is the closest spice. I think marjorams alternative name is wild oregano.

I would use tarragon instead, sort of similar...

or, thym... oregano is much too strong...
