there is so much you can do..... just don't put anything on it that is super high in fats/cals (heavy dressings, lots of cheese, french fries, etc) Check out the link I posted below:

Asparagus Salad with Orange Wasabi Dressing
Ingredients (6 servings):
4 tablespoons soy sauce
4 tablespoons orange juice
2 teaspoon sugar
2 teaspoon Wasabi Powder
1 teaspoon Ground Ginger
3 tablespoons sesame oil
30 medium asparagus spears, trimmed
1/4 teaspoon Cracked Black Pepper
1 1/2 cups shredded napa cabbage
Directions:
In a small bowl, whisk together soy sauce, orange juice, sugar, wasabi powder and ginger.
Pour sesame oil into a shallow dish and add the asparagus. Sprinkle with pepper. Roll asparagus in oil to coat. Grill asparagus over medium heat 4 to 6 minutes, or until crisp tender.
Place shredded cabbage on a serving platter. Arrange grilled asparagus on top, and pour dressing over asparagus and cabbage.

Romaine lettuce and some green leafy or red leafy lettuce for color, hand washed and picked through to remove bad leaves, spin dry with a salad spinner
add your favorite vegetables
we use
grape tomatoes
garbanzo beans feta cheese crumbles
good quality croutons
cubed Haas avocados
fresh cilantro cut with scissors after this is all tossed in a large salad bowl we top it with a dressing that is hand made with rice vinegar good extra virgin olive oil crushed garlic (2-3 cloves) as well as some freshly ground Italian spices (rosemary, oregano, basil, thyme)
McCormick sells a grinder with all those spices ready to grind, its called Italian herb blend (I'm looking at it) any way combine dressing ingredients together in a large glass measuring cup and microwave for about 10 seconds and stir.
pour over salad and toss
grind fresh pepper I like to add craisins to mine individually, but there you have a perfect Italian dinner salad

California Chicken Salad
Preparation - 15 minutes
1 cup shredded lettuce
1/4 pound cooked, skinned, and boned chicken, chilled and thinly sliced
1/2 small cantaloupe(1 pound), pared, seeded and thinly sliced
1/4 medium avocado (2 ounces), pared and thinly sliced
2 tbsp each plain lowfat yogurt and mild chunky-style salsa
1 tsp each minced cilantro and lime juice (no sugar added)
dash of pepper
Onto each of 2 individual plates arrange half of the lettuce; decoratively arrange half of the chicken, cantaloupe, and avocado over lettuce.
In small bowl combine remaining ingredients and stir to combine. Spoon over salad

Mexican Tuna Salad
Preparation - 10 minutes
4 ounces drained canned tuna, flaked
1/2 medium tomato, chopped
1/4 cup each finely chopped red onion and red or green bell pepper
2 tbsp plus 2 tsp reduced-calorie mayonnaise
1 tbsp each chopped cilantro and lime juice (no sugar added)
In small mixing bowl combine all ingredients, mixing well.

Warm Mushroom Salad - serves 4
2 1/2 tbsp balsamic or rice winegar
1 1/2 tbsp water
3 tbsp port wine(or anysweet red wine)
2 cloves garlic, finely minced
8 ounces fresh mushrooms, sliced into 1/4-inch slices
1 tsp margarine
1/8 tsp freshly ground black pepper, or to taste
4 leaves of Boston lettuce, rinsed and dried
1 tsp chopped fresh parsley
In a nonstick skillet, heat vinegar, water, wine and garlic over medium-high heat until small bubbles begin to form.
Add mushrooms and stir frequently 8 to 10 minutes, or until all liquid evaporates. Add margarine and pepper, stir to coat evenly.
Arrange mushrooms on lettuce leaves andsprinkle with chopped parsley. Serve warm.

In a small bowl, mix together oil, vinegar, salt, cilantro and salsa.
Set aside.
In a large bowl, combine all remaining ingredients.
Pour dressing over and toss well to mix.
Serve Immediately.
Serves 4 as a main dish; 8 as a side dish.

3 green onions (scallions); sliced
1 cup chopped sweet red pepper
1 cup chopped green pepper

2 radishes; thinly sliced
4 bacon strips; cooked and crumbled
1/4 cup shredded Cheddar cheese
2 medium tomatoes; halved and sliced

2 hard-cooked eggs; sliced
Layer or toss as desired. Serve with dressing of your choice.
"Blueberry Chicken Salad" - 4 servings
2 cups fresh blueberries
2 cups cubed cooked chicken breast
3/4 cup chopped celery
1/2 cup diced sweet red pepper
1/2 cup thinly sliced green onions (scallions)
1 (6 oz.) carton lemon yogurt
3 tbsp. mayonnaise
1/2 tsp. salt
Bibb lettuce leaves (optional)
Set aside a few blueberries for garnish. In large bowl, gently combine chicken, celery, red pepper, onions and remaining blueberries. Combine yogurt, mayonnaise and salt; drizzle over chicken mixture and gently toss to coat.

"Apple-Walnut Tossed Salad" - 8 servings
1/4 cup red wine vinegar
1/4 cup fresh cranberries
2 tbsp. honey
1 tbsp. sugar
1 tbsp. chopped red onion
1/4 tsp. salt
1/4 tsp. pepper
3/4 cup vegetable oil
2 (5 oz.) pkgs. spring mix salad greens
3 medium Red Delicious apples; thinly sliced
1 cup chopped walnuts; toasted
For cranberry vinaigrette, combine first 7 ingredients in blender; cover and process until blended. While processing, gradually add oil in a steady stream. Transfer to serving dish. In large bowl, toss salad greens, apples and walnuts. Serve with vinaigrette.
"Lemon Vinaigrette on Greens" - 4 servings
1/4 cup lemon juice
1/4 cup vegetable oil
1/4 cup olive oil
2 green onions (scallions); finely chopped
1 tbsp. minced fresh parsley
1 1/2 tsp. sugar
1/2 tsp. ground mustard
1/4 tsp. salt
1/8 tsp. pepper
4 cups torn romaine
In jar with tight-fitting lid, combine all ingredients (except romaine); shake well. Place romaine in salad bowl; drizzle with dressing and toss to coat.

use various kind of lettuce such as romaine, Boston etc., add tomatoes (cheery or regular wedges), cucumbers, radish, your favorite cheese, olives, croutons, parsley (optional), salt and pepper and a vinaigrette or Italian dressing is healthier than creamy dressings.
