what else do you think it should be!!!!
and in the cooked steak, it is just coagulated... lets face it: a steak is a slice off a dead animal, and as such it contains blood, water, fat...
Hey, that does not have to make you into a vegetarian, it is simply a fact.
Note that Kosher or halal butchers ritually drain the blood off the body, before carving the meat... perhaps you'll prefer that idea...

I think it is the blood, that they call juicy.. I don't like rear, medium rear, pink, or just ran thought the flames on each side..
Because it's not done.. If you poke it with a fork, and it runs off your plate, or you put it in your mouth, it kicks your teeth out.. Then it's not done..
It would be a struggle, trying to stab it with the fork, by the time you get it in your mouth, you'll develop strong mussels because trying to get it from your plate to your mouth...
No.. I have to have it very done, Brown meat, not pink or red meat..

well when i order my good i always get or ask for all my meat to be fixed well done.. and i never get any food that is not well done because if you get an steak that is medium rare it is not fully done or cooked and so you run the chance at getting sick of germ causing diseases and then you will be caught in the process of germ causeing sickness so i wouldnt reconmend eating steak with blood runing out of it that just sounds down right nasty so i would reconmend eating your steak well done instead of medium rare..................hope this helps

It's the marbling. The fine white lines of fat you see in the raw meat have melted.

its water and blood. depending on the color. blood actually cooks into a solid grey-brown goop and fairly low temperatures. so depending on the color and transparency you can figure out where on the water/blood spectrum the "juice" is.

No. Its actually the broken down fat and connective tissue that hasn't been drawn out along with natural moisture.
The red in steak and what you see in package's of beef isn't actually blood its a dye.

It's a combination of blood, fat, and water; meat has plenty of all three.
