Berry-Good Mousse
1 envelope unflavoured gelatin
1/4 cup orange juice
3 cups fresh strawberries
1/4 cup icing sugar
1/3 cup whipping cream (optional)
4 egg whites
1/4 cup granulated sugar
Garnish:
Fresh strawberries, hulled
In saucepan, sprinkle gelatin over orange juice. Let stand 5 minutes to soften. Warm over low heat until gelatin has dissolved.
Meanwhile, hull strawberries and place in food processor or blender. Add icing sugar and process just until pureed.
Transfer to mixing bowl and stir in gelatin mixture. Refrigerate until mixture is consistency of raw egg whites. Whip cream (if using) and set aside.
In large bowl, beat egg whites until soft peaks form. Whisk about ¼ of beaten egg whites into strawberry mixture.
Fold strawberry mixture and whipped cream into remaining beaten egg whites.
Pour into 6-cup glass serving bowl or individual glasses and refrigerate at least 4 hours or up to days.
Garnish with fresh strawberries.

This isn't completely fruit based, but when I baked it, it tasted really good and light. It's a ricotta cheesecake with rasberries. I hope this helps. You can pretty much change the fruit to anyone you like, just make sure it will taste good with a cheesecake.
Cooking spray
1 (15-ounce) container part-skim ricotta cheese
1/2 cup reduced fat sour cream
4 ounces Neufchatel cheese, or reduced fat cream cheese, softened
3 large eggs
3/4 cup sugar
1/4 cup all-purpose flour, unbleached
1 teaspoon vanilla extract
1 teaspoon finely grated orange zest
1/4 teaspoon salt
1/4 cup all-fruit seedless raspberry jam
1 tablespoon orange liqueur or water
2 (6-ounce) containers fresh raspberries
Preheat oven to 325 degrees F.
Coat a 9-inch springform pan with cooking spray. Place ricotta in a food processor and process until smooth and creamy. Add sour cream, Neufchatel, eggs, sugar, flour, vanilla, orange zest and salt. Process until well blended. Pour into the prepared pan and bake until the center is just set, 50 to 55 minutes. Transfer to a wire rack to cool and then cover and chill in the refrigerator for at least 3 hours.
In a small saucepan, bring the jam and liqueur or water to a boil, stirring constantly until smooth. Remove sides of pan. Brush the tart with the jam mixture and top with raspberries, flat-side down.

This is so good and very low fat!! I usually make mine into muffins, though. Pineapple Angel Food Cake * 1 (16 ounce) package angel food cake mix * 1 (20 ounce) can crushed pineapple with juice * 1 (12 ounce) container frozen whipped topping, thawed DIRECTIONS 1. Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13 inch pan with vegetable oil spray. 2. In a large bowl, combine cake mix and pineapple (with juice). Mix until well blended. 3. Pour batter into prepared 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 25 minutes or until golden brown. Let cool. 4. Serve with whipped topping

Pavlova... Its an australian dessert which is basically a meringue base, fresh cream and fresh fruit. It can also be made with splenda instead of sugar.

Place all ingredients in bowl and beat until stiff (at least 10 minutes).
Cover oven tray with foil. Spread the mixture into a round shape about 25cm across.
Place in the centre of the poven and bake at 150 degrees for half hour. Turn oven off - DO NOT OPEN OVEN - leave in oven until cool.
For filling, whip cream with a few drops of vanilla essence.
Top with fruit and serve.

Fruit crisps are nice and you can change out lots of ingredients for healthier ... I usually leave the sugar and butter along because that's about texture...but I like to use ww cake flour and add whole rolled oats for chewyness.
Baked or poached apples or other fruit, I did some amazing pears poached in white wine with spices once - then were part of a complex tart recipe but I actually liked the pears better just plain.
Sometimes I just get chocolate yogurt, preferably Brown Cows cream top, stir it up and dip fruit pieces in it like fondue.

Creamsicle clouds: 1 large container french vanilla yoghurt
4 navel oranges-peeled and diced
1 small container whipping cream
combine the yoghurt' half the oranges and whipping cream in a blender or processor and whip til well blended and a uniform color. fold in the remaining chunks of oranges. for a thicker,richer variation, strain the yoghurt thru cheesecloth for several hours beforehand and/or add 1/2 brick of softened cream cheese

INGREDIENTS
1 cup pumpkin puree
1 (1 ounce) package instant sugar-free vanilla pudding mix
1 teaspoon pumpkin pie spice
1 cup evaporated skim milk
1 cup skim milk
DIRECTIONS
In a mixing bowl, combine the pumpkin puree, vanilla pudding mix, pumpkin pie spice, evaporated milk and skim milk. Blend together until smooth; place in parfait glasses and chill until set
Momma Lamb's Famous Fruit Salad
INGREDIENTS
1 (20 ounce) can pineapple chunks
1 (5 ounce) package instant vanilla pudding mix
1 (15 ounce) can mandarin oranges, drained
1 (10 ounce) jar maraschino cherries, drained
3 bananas
DIRECTIONS
Drain all of the juice from the pineapple into a large bowl. Set the pineapple chunks aside.
Add the vanilla pudding mix to the pineapple juice and mix well until smooth. Stir in the pineapple chunks, mandarin oranges, and maraschino cherries. Mix well. Refrigerate for at least 30 minutes.
Just before serving slice the bananas into the bowl and fold in.
