There are some very beautiful custom wedding cakes out there; there are limiting factors, though, such as money and finding a person that's good at baking and decorating the cake of your choice.
If the situation ever comes up for ME, I think I want something with sugared/freeze-dried/crystallized flowers on it. :-)

Get three round tiers graduating sizes then find the color of your them and have a florist fet you fresh flowers to cascade down the side.

Fondant cakes are beautiful but I hear they taste "pasty". But they are realllllly pretty. So if you are going for looks then that is your best bet.
