The best way to have cheese is simple. Eat it with something plain, like fresh french bread from the bakery, dinner rolls, or even in between two slices of white bread.

Go to a great place, like Italy. Then visit a wonderful deli in a perfect little village. Go downstairs into the tasting area and sample the cheese. Pick your favorite. Go back to the perfect little room in the villa. Cut a nice slice, room temperature, and eat it while thinking about the taste.

When paying attention, you can pull out the flavor differences in cheese that are caused by the animals grazing on different grasses. Cheese made in the same methods, from milk of the same animals will taste different as the seasons change, because the animals' food sources change.

Love it. Eat it. Smile!

Most of the cheeses I like, smoked cheddar, Swiss, etc, go well with crackers. Try putting a piece of cheese a little smaller than the cracker on top of the cracker and a small drop of a good, brown, mustard in the middle. Put in a toaster oven until the cheese melts. This can be done in a microwave, but doesn't taste as good.
