That is correct. Honey may crystallize, but it does not sour or go bad. If it crystallizes, all one needs to do is melt it and it will be reconstituted. Oils, and even vinegar, have shelf lives, or parasites that can destroy the product. Honey is also the only food that humans consume that is generated by another animal. It's amazing stuff.

Yes, I love honey. Honey is a natural food. It even will not allow mold to grow on it. It you drop a piece of bread in a honey dish. The bread will get moldy. But the honey will not. Honey will chrystalize with age. But if it is heated at a slow warm temperture then it is still yummy and safe to eat.

I once took a group of kids on a fieldtrip to Barksman Honey Company in Hillsboro, Kansas. It was amazing how clean this place was. You would think that honey is so sticky that it would be a mess. Wrong, this place was so spotless. They gave all kinds of info. They said a honey bee will fly the distance of to the moon and back in the lifetime of a honey bee. They explained the process of harvesting the honey. They heat the honey on a low heat to maintain the light color. If it is heated to hot then the honey becomes dark in color.
